Homemade potato gnocchi

How To Make Potato GnocchiIt only takes three ingredients to make soft and tender potato gnocchi. My Polish dad was the cook in our family and he used to make them and called them kluski which I later learned are the same as Italian gnocchi. In Poland they are called kopytka and the Polish way to serve them is with fried bacon and onions but nobody needs to do that any more! I prefer gnocchi Italian style as a side dish with red sauce or as a main dish topped with my homemade bolognese sauce. Anything you can do with pasta, you can do with gnocchi and it’s a pretty simple recipe. Plus they freeze beautifully. Click here for the recipe. – Jenny Jones

I love skinless chicken drumsticks!

Skinless Chicken Drumsticks

If you haven’t tried this easy recipe yet, it’s absolutely delicious and so healthy! I often make these skinless chicken drumsticks for the weekend because they’re just as good cold for a quick snack and it’s such an easy recipe. You won’t miss the skin which is where all the saturated fat is. I made these for the weekend (a dozen every time) and there are still some left… but not for long. It’s one of my best chicken recipes. Here’s the link for the recipe. – Jenny Jones

Best pepperoni pizza ever!

Homemade Pepperoni PizzaIf you like super crispy pizza like I do, you will LOVE this recipe.  It’s a healthier pizza than most, and the crust is so crispy you can hear it crackle when you slice it. That comes from using a pizza pan with holes. And by using instant yeast, you don’t have to rise the dough so that saves almost an hour.  You do all your prep while the oven heats up and 15 minutes later…  you and your pie hole will be very happy. Yes, you can make a healthy homemade pizza and nothing else compares. “Best Pepperoni Pizza Ever” is my most watched video on youtube!  Click here for the recipe. – Jenny Jones

I love my vegetable pasta!

Easy Veggie PastaI got a late start thinking about dinner and decided to make my vegetable pasta. As simple, easy recipes go, this is the best, and one of the healthiest. As long as you have some fresh vegetables in the fridge, you can put this together in 20 minutes. Tonight, I made it with broccoli, asparagus, kale, spinach, and bowties. Try it yourself and this could become your favorite meal or side dish, too. Click here for the recipe. – Jenny Jones

My Beef Stew Recipe

Fork Tender Beef StewIf you’re looking for an old fashioned beef stew recipe, you will love this one. The meat is so tender you can cut it with a fork and the potatoes and carrots are full of flavor. It’s a pretty easy beef stew recipe. I dredge the meat in seasoned flour, brown it in olive oil, then it cooks in beef stock for an hour and a half. Long cooking is what makes the meat so tender and using beef stock instead of water makes a delicious beef stew.

I make my own beef stock and keep it in the freezer to use for this delicious dinner recipe and by the way, beef stew tastes even better the second day. As comfort foods go, homemade beef stew is one of the best. It does take time but it’s mostly unattended and really worth it. Click here for the recipe. – Jenny Jones

Browned Cabbage Rolls

I’ve decided to make my fantastic cabbage rolls for my next video. It’s one of my best dinner recipes which I learned from my dad who made this traditional Polish dish all the time. My favorite way to serve them is browned in a little olive oil with a dollop of sour cream on the side. My Polish cabbage rolls video should be up in the next couple of weeks. My marinated pork tenderloin dinner

Marinated Pork Tenderoin

Show some love to the pork tenderloin! It’s one of the leanest (and cheapest) meats around and it cooks really quickly. It’s always tender as long as you don’t overcook it, so a meat thermometer is very useful here. My marinated pork tenderloin comes out so tender and flavorful and this easy recipe takes very little work. Everything cooks in the oven at the same time… in 30 minutes! I love all-in-one meals and besides the good-eatin’ combo of spiced up pork and roasted veggies, the leftover pork slices up into some awesome sandwiches! – Jenny Jones

Homemade pizza is the best!

PizzaMroom_8884I made pizza last night for the Super Bowl – Denis likes mushrooms and I like plain so… half & half. And we both like a crispy crust, one that crackles when you slice the pie. My favorite crust comes from using a pizza stone and wooden peel but you can also get a great crispy crust with one of those special pizza pans with holes. You can see how it works in my healthy Pepperoni Pizza video. Click here to see it.

Make the best nachos ever for Superbowl

Superbowl Nachos from Scratch

Do you spend Superbowl Sundays on the couch eating unhealthy snacks, watching guys in better shape than you play football? Is your fridge the only place you’ll ever see a 6-pack? Then try what I think are the best healthiest nachos ever.

They are low fat and I use so many healthy ingredients, you can have these nachos for dinner. They take a little work but you won’t feel like an over-stuffed football by the second half… you won’t need a time out to take a nap… your waist band won’t snap from too many chicken wings… the sofa springs won’t be audible every time you sit down… you won’t need double coverage to hide your stomach… your stomach won’t hurt from having one turnover too many… your friends won’t be scrambling to get your heart started again… your trip to the bathroom won’t be third-and-long… I think I will cut back on these really bad jokes… but make sure you roll out my nachos… they are the bomb. Jenny Jones

Salmon Patties

Easy Salmon PattiesFor quick healthy meals, I always keep canned  salmon on hand for these delicious patties. I make them with red pepper, parsley, onion, soft whole wheat breadcrumbs and egg, browned in olive oil with a side of steamed vegetables.

Salmon is one of the best sources of omega-3 fatty acids that protect the heart so I eat a lot of salmon sandwiches, too. I think it’s a Canadian thing… Click here for the recipe.
