TERESA (from Canada) MADE MY 2-HOUR NO KNEAD BREAD

“Hi Jenny!  I just took this out of the oven. My husband is on route home after being away for over 3 months. What says ” welcome home ” better than homemade bread? Thank for your recipes and excellent videos. Happy New Year! ~Teresa – Toronto, Ontario.”

MICHAEL MADE MY NO KNEAD BREAD

“IL MIO PANE – Hi Jenny, I have tried your Dutch Oven Bread. I used your recipe with a few changes. It came out terrific! Less chances of getting burned by the iron pot. After the first rise and the folding over. I put the bread with the parchment paper into the pot, cold…. then into the 450 degree oven. When the temperature hit 200° or set the clock for 35 minutes. Baked it and then took off the lid carefully, because it was really hot. Gave it another 10 minutes with out the lid. As you can see it was a complete success. I gave some to my friends and they couldn’t believe it I said make me loaf. You know what I told them?

Jenny, you are a real pleasure to watch when you cook and some of your words of wit really add more to your terrific recipes. Keep up the great work. Love your style! ~ Michael Juliano ( retired Television News Cameraman ….30 years )(2 Time Emmy winner too).”

– You just made my day! It’s good to see a face with the bread, and both are looking great! Congratulations on your Emmys, and the bread! – jenny

MARIA (from Scotland) MADE MY CIABATTA BREAD

“Tried this Ciabatta Bread for the first time today. I have baked your breads for awhile now and they always come out good. I did try riding the sourdough wave but it was too much work and planning… So now I am a convert to your breads and recommend your site to anyone that wants to bake bread without the fuss. I also make your pizzas, at least once a month. Thank you. Writing from Aberdeen, Scotland. ~ Maria Elisa Metson.”

– I’m so excited to see my recipe in Scotland! Your loaf looks wonderful! I’m with you on giving up on sourdough. It’s like taking on a part-time job. 😀 – jenny

MONA (from California) MADE MY NO KNEAD BREAD

“I brought an Italian themed meat/cheese board to my sister’s house for Thanksgiving.  The upper left has the two loaves (not high, but very chewy and tasty) I baked using your recipe. I brought home: cheese, olive oil, olive spread, and honey(s) from Northern Italy, Slovenia, and Greece in October.  The brined and oil-cured olives, meats, and fruit I purchased locally in the Little Italy district of San Diego.  Happy to report, the bread paired wonderfully with every single ingredient. I baked the loaves on a baking sheet covered in parchment.  Maybe Santa will bring a Dutch Oven for Christmas.  Thanks for the recipe!  Mona Oge, San Diego, CA.”

BEV (from Canada) MADE MY CARAMEL CORN

“Oh, Jenny, this is very dangerous stuff!  My plan was to give little boxes of it away but now I have to make more.  This is the lightest, best caramel corn we’ve ever had and the first time I’ve made my own popcorn (which I’ll be doing from now on, who knew it was so easy).  Another wow recipe – thank you!  Bev (from Canada).”

– Don’t I know it! Everybody raves about this stuff when I give it as a gift. After seeing your photo, I’m going to gift it to myself – it’s close enough to Christmas as far as I’m concerned.🎄 😋 – jennyHomemade_Caramel_Corn

BARB (from Canada) MADE MY CINNAMON ROLLS

“Hi Jenny!  My hubby has a sweet tooth and has been craving cinnamon rolls of late. We both lost our jobs this past year, so I’ve been making everything at home from scratch for a change. I’ve lots of time for cooking now and we are addicted to all your easy bread recipes! I was reticent about cinnamon rolls, however. I thought they’d be too tricky for me!  BUT I watched your video, taking note of the tips for not rolling too tight and using dental floss for slicing. It was easy!  The only extra step I did was giving the dough a second rest after I rolled it out. It wouldn’t “relax” and kept shrinking back up again. But after I gave it the second rest for a few minutes, it co-operated with me. I was able to roll it a second time to the correct dimensions with no problem. I’ve attached photos showing them in the pan before rising and after rising, then after baking and glazing.  My husband was very happy and didn’t realize I’d used no butter at all. Just light olive oil in the dough, then spread with a little Becel margarine before filling.  We ate them all by the next day!  I get more confident in my kitchen skills with every recipe of yours that I try.  Thanks so much, Jenny … God bless! – Barb from Ontario.”

“Hi Jenny, This was the easiest bread i have ever made. I found your recipe through one of my good girlfriends and have loved it since. I am super excited to try out your other recipes and will continue to make this bread in the future it turned out perfect. My husband always says things taste “okay” but when he bit into this bread the first words that came out of his mouth were “this is really good!!!!” Thanks again! Best wishes for the holiday season! ~ Marzena Frausto, Canadian living in Chicago.”

– I’m glad you got such a great compliment. It’s about the same with my husband. He says everything tastes good but once in a while, he says, “very good,” and that makes my day! jenny (former Canadian, former resident of Chicago) 🇨🇦 Best_No_Knead_Bread

DALILA MADE MY EASY PUMPKIN BARS

“Hi Ms. Jenny! 🌷I was lucky enough to have all the ingredients I needed to make your EASY PUMPKIN BARS again. In fact I made two batches, how could I not! 😉 I’m  telling you this is such a wonderful recipe, the pumpkin bars come out soooo moist. I was also quick to take pictures this time, they really do NOT last long. In one batch I added dark chocolate chunks, the other one has toasted walnuts. For the frosting I did make it a bit more stiffer, easier for me to pipe it. Thank you for sharing your ‘awesome’ recipes, keep them coming! Happy Baking! 🌼 Dalila.”

“Good morning Ms. Jenny! ☀️ I hope you and Denis are well and are getting comfy in your new home. The weather is taking a turn and I can say Fall is here for sure….LOL!To get into  Fall foods I did make your Easy Pumpkin Bars again,  unfortunately no picture. They disappeared soooo fast……again…..everyone loves them! I’ll have to make more pumpkin bars and try to keep everyone’s grubby hands off….LOL! I also made your Lightened Up Pumpkin Cheesecake….DEEEEE-LISH!! Thank you for all of your wonderful recipes! I truly enjoy looking through your blog to pick out recipes to make. Your recipes ALWAYS work out for me, they are definite winners in my kitchen.

I made your QUICK AND EASY SPROUTED WHEAT BREAD. I’ve made it many times before with success in a regular size loaf pan. I sometimes add some sort of  seeds to the top of the loaf. This time I tried it in my two smaller pans, 7.75″ X 3.75″ X 2.5″. The loaves came out great, I topped one with pumpkin seeds. The bread always comes out so soft in the middle, yummy indeed!  Thank you for making “bread-baking”  so much fun Ms. Jenny! 😀 Wishing you and Denis a lovely day! 🌻 Happy baking! ~ Dalila G.”

MIL (from Canada) MADE MY VANILLA CAKE

“Hi Jenny:  My 4 year old grandson was watching Bubble Puppies the other day and he noticed that they had a rainbow cake and he promptly turned to me and asked if I could please make him one because he wanted to taste a rainbow cake.  So of course I went to your recipes and made the Vegan Vanilla Cake. He was so excited to try it and he just loved it. I have to confess the adults also loved it. I don’t use food colouring very often but I just had to make this one for him.  I have a set of five tiny round cake pans that I used. I weighted each pan to make sure the batter was evenly disturbed and your recipe was just enough. I then used food colouring gels for the colours and iced the layers with whipped cream and topped it with whipped cream swirls with a touch of tiny chocolate chips and chocolate little sticks.  The cooking time was much less so I just kept an eye on the oven.   Your recipes saved the day again.  Thank you. ~ Mil from Canada.”

CHARMAINE (from The Netherlands) MADE MY WHOLE WHEAT BREAD

“I doubled the recipe (except the yeast and salt) and used amounts of whole wheat, white spelt and AP flour as I had available. This was the easiest bread recipe I have ever worked with!  I have been baking bread for the last 10 years. I only use store bought when in a pinch. You can imagine I’ve tried a lot of recipes, over the years. I’d finally settled on a very popular (Allrecipes) recipe. Though the flavor  of that bread is good and it’s full of grains, it’s very time consuming and my results have not been consistent. So, I searched and saw the pic of your bread and, it looked so perfect, I decided to try it. I followed the recipe but added a variety of grains and seeds. This is the best rise I have ever gotten (looks exactly like the picture) and the loaves are so flavorful. The texture is perfect. Absolutely delicious! Needless to say, this is a keeper and will be my recipe of choice, going forward. Thank you for the wonderful, perfect recipe! ~ Charmaine S., The Netherlands.” 🇳🇱

SARAH (from West Africa) MADE MY ONE BOWL YELLOW CAKE

“Dear Miss Jones, I wanted to share not only my picture of your One Bowl Yellow Cake, but also the story behind my making it. Since January, I have been in West Africa on a mission trip. I work a good deal in the kitchen and needed a simple cake recipe, preferably without butter, (we don’t have that around much), without a lot of eggs and which wouldn’t change too much if I used another flavor than vanilla (which we don’t have). Your oil cake was perfect. We were wanting a cake with Malibu rum, so I replaced the vanilla with that. I doubled the recipe to make it two layers, but had to do one 8″ and one 9″ layer, since we only had one of each size pan — you get creative in Africa! For the bottom (9”) layer, I placed sliced bananas in the bottom of the pan before I poured in the batter.

They turned out fabulously! Not perfectly shaped (from using parchment paper instead of grease) and one was a little slanted (the oven is gas, so who knows what happened), but they were so light and spongy! (Our baking powder cones in packets here and I wasn’t sure how much was in each one; I put two in the batter, so maybe that’s why they were so light!) The bottom of the 9″ layer turned into the middle of the cake; I brushed the layers with more Malibu and made a flour frosting, again with the Malibu, to cover it, and decorated it with more sliced bananas. I wanted to make a coconut-flavored sugar glaze to drizzle around the edges, but it turned I sugar, so I broke it up and sprinkled it on top. Yesterday, I made it again, this time with strawberry flavoring, strawberry frosting, and chocolate hazelnut spear and caramelized bananas between the layers. Two pictures are attached; thank you for your fabulous recipe, which can even be made in the rainforest! Sincerely, Sarah McDonald.”

“I made these today and Oh My! This recipe is excellent. I don’t have a piping bag yet so I sliced the bun 2/3rds through, put strawberry jam inside then a pile of fresh whipped creme. They remained me of the creme buns  of my youth, when I was a child in Australia. I now believe that the Polish bakers must have started the creme bun craze there. Delicious. YI LIN (from Malaysia) MADE MY NO KNEAD BREAD

“The first two pictures are the unsuccessful ones. The second two are the good ones. I tried this a few times and got very wet dough and uncooked interiors. Then I changed the water-to-flour ratio to 80% and I got it! Bubbles after the first proof, drier and easier to handle dough, air pockets and dry inside the bread after cooked and cooled completely! I live in Malaysia so the flours I get are of different compositions. The all purpose flour here has very low protein content, about 9% and bread flour is higher. So I mixed the both. I put about 70g all purpose and 290g japanese bread flour with 288 ml water. To improve the bread taste, you can leave the dough longer (4 hours) in room temperature (here is about 32 Celsius). I discovered this coincidentally. Happy that I managed to make a bread from scratch! Thanks! I have enjoyed this bread making challenge. Best regards, Yi Lin.”

“Hi, Jenny.  Long time fan.  My wife says I like you better than I like her.  On some days, I must say… well… never mind. I made your hot dog buns this weekend.  I ran out of eggs so didn’t do the egg wash.  They didn’t look as pretty as yours but they were delicious. I used them to make Connecticut (aka “hot”) lobster rolls, which we much prefer to the cold lobster rolls with mayo dressing. Anyway, the rolls were perfect for these!”

JULIE MADE MY CINNAMON ROLLS

“Cinnamon Rolls Fresh From Oven. Below is the Fiesta Ware casserole dish I bake (your recipe) cinnamon rolls in. I have used this pan so much over the years for so many different cooking applications.  I find that lining it with aluminum foil keeps it new looking, plus, it helps find the right temperature for rising and baking the cinnamon rolls.  As you can see the pan is about 2 inches in depth and the cinnamon rolls nearly reach the top of rim—sometimes, even  more so.  It’s nice to serve in after baking, too.”

“Hi Jenny – I’ve been looking for a decent whole wheat bread recipe for *decades* & so glad I found yours. Thought you’d like to see it with an egg wash glaze and (homemade) Everything But The Bagel seasoning on top – oh so good toasted! I do make the whole thing in my mixer with minimal hand kneading (I let it rest in the mixer for 5 minutes before turning out to give the flour a bit more time to hydrate). Slice it & freeze with wax paper between the slices & easy peasy to take out what’s needed. Thank you for this recipe! (and for the crusty roll recipe, too – always on hand in our freezer). Cheers, and happy baking!”
