SANDY MADE MY NO KNEAD BREAD

“Hi Jenny, I tried your recipe today and it came out amazing! It’s my first time making bread and I wanted to thank you for your truly forgiving dough recipe. I wanted to share the photos with you:

  • Lighter loaf farther from camera was made following your recipe
  • Darker loaf closer to camera is made with 2 cups AP flour + 3 cups oat flour + 2 cups hot water + 1/2 tsp yeast + 2 tsp salt
    (I used oat flour because I ran out of AP flour, but the result was still amazing! Just a little denser, moist, and didn’t rise as much – tasted like wheat bread)
  • Just a note: I didn’t have a dutch oven, so I used regular soup pots that were oven safe, and then covered the top with foil – here are the results below”

“Hey Jenny..been making no knead bread (ones you let rise overnight) for couple years. But yr recipe is so much simpler & FASTER, with wonderful results. I use an oval Kitchen Aid cast iron pot – like the shape better than round – but upped yr ingredients by 1 1/3 times ie 4 cups flour etc, to fill my pot. Increased quantities work fine. Shaping the parchment paper into the oval shape (folds around perimeter) results in all sorts of interesting ridges on sides, as the dough shapes itself into it. I divided it into two parts because I have a smallish Dutch oven and I only have a convection toaster oven available at my apartment. I made modifications to the recipe by including black olives and pepper Jack cheese and topping one of the loves with Maldon salt. Both came out so yummy that my boyfriend and I ate them all in the same evening. Much healthier for my hubby and myself too, as always your bread recipes are fabulous! Your SIMPLE WHITE BREAD (with egg) is one of my hubby’s favorite, it’s always in our bread drawer. I also make your EASY DINNER ROLLS often. I mix up ideas though, like these were made into a cloverleaf style. Sometimes I add seeds to our rolls….sesame seeds, poppy seeds, sunflower seeds or flax seeds. “Hi Jenny.  I have made your Greek lemon chicken with potatoes and green beans a couple of times in the oven and love it. Today I decided to toss everything in the slow cooker instead and it turned out just as delicious, with the added bonus of a lemony broth!  I had some grape tomatoes I needed to use up so tossed them in the last half hour or so of cooking. I followed your recipe and let the chicken and potatoes marinate before tossing into the crock pot with the marinade, cooked it on high for an hour, then added the green beans for another 2 hours.  This could all be cooked on the low setting but for more hours of course.

PS The crow on the counter is in memory of my late father and grandfather.  Grandpa immigrated from Croatia in 1903 at the age of 26, then met and fell in love with my grandmother, who immigrated from Poland.  You can bet I will be making some of your Polish recipes; I miss her cooking. “Hi Ms Jones – Jenny – I found your YouTube page and blog just recently and was surprised to hear about your Polish background, despite having obviously known of your fame in other endeavors and TV. I am also of Polish immigrants. My Father was the cook (as yours). He cooked in the Army and my mother was so tired with 7 kids (me the youngest), she hated cooking and it tasted like it.

I am so glad I found your recipe site as I am also a Foodie and I teach nutrition (I believe in Food as Medicine) to my patients as a Registered Nurse case manager and health coach working for a wretched insurance company (but it’s my job whereas I also started in acting, theater and writing). I do believe that home cooking is a factor in health:  people who cook at home using fresh ingredients are 40% less likely to develop health issues.

My husband and I are embarking on growing our own mushrooms this year. (the new buzz ingredient for health — cauliflower now taking a back seat — LOL).  I do a lot of canning in the Fall depending on the crop we get from our small garden, and we utilize drying foods as well. I make pierogi every year for family (Christmas Wigilia)  and friends and we make a party out of it, plus on Easter, the beet-pickled eggs and Babka are traditional musts.

I usually don’t take photos of my disasters although Ive had many (NEVER put Pyrex on a hot burner, eg — a Rib roast disaster), but I thought I’d share at least this with you .  I tried to attach others but too big. Today, I made your 90 minute Wheat Bread recipe.  Ive been making my own breads now for about 3 years (the Dutch oven artisan bread recipe is a winner) and I like to also meld and merge other ethnic cooking into my craft (exploring Thai and Indian and Asian lately).  The easy rise time with your bread recipe helps when you “forget” to start your “starter” the night before.  I also like controlling my own ingredients when store-bought these days is poison.

I appreciate your stamina in your career and hope you are living a lovely happy life after so much hard work and dedication to your causes. I started getting the ingredients out and realized that my neighbor had all of my 8 inch cake pans. Then I discovered that I had only olive oil or grapeseed oil.. So I went with a glass pan and grapeseed oil and assumed it was doomed.

The cake turned out perfect. Took a little bit longer to bake, but I am high elevation in the mountains of Arizona and that happens. (and my oven is old and crabby) I was going to show you a picture of the inside, but hubby and 2 of his friends ate the whole thing. Your recipe was a total success, even surviving my lack of planning.  “Jenny, I just had to let your fans know what an amazing cake this is! I used a 7” angel food cake pan (odd size I know but perfect for loaf cakes!). I made the cake exactly as instructed with the addition of orange zest as you suggested. I covered it with chocolate ganache made with chocolate chips and evaporated milk instead of cream – oh – ONE CHANGE – the chocolate swirl was 1/3 cup melted chocolate chips + batter. The cake rose beautifully and it is so tender and moist with a delicate crumb. THANK YOU!”

“Greetings from Illinois! Just finished another batch of PP. Turned out great again. And I am really having FUN! I over filled  one of the doughnut molds (on purpose) with the Pączki dough and it looked almost like a muffin with a small hole on top. Filled a silicone sphere ice cube mold with the dough (just a little too much) and apple butter…….it was almost round. It started to push the 2 molds apart and come out the top. These shot glass molds were frozen/ a mix of oats and ground coffee. Tried to bake them later but they slumped. (but didn’t blow up) Haven’t tried the PP dough in the shot glass molds yet,but I did try the red velvet cup cakes (tasted great!) but couldn’t get them out of the mold in one piece. ~ (K) Larry

“Greetings from Illinois! Just finished my second batch of PP. Turned out great again. The dough is very forgiving…..they looked  “rough” going into the oven. I just got my silicone doughnut molds a couple days  ago and put some dough in one to try them out. I only filled it with apple butter on one side. It was a little thick, but I have been using a heat lamp with the fast rise yeast and getting  good results. Just did the deep dish pizza (12 hour)  start to finish in 3 hours. ~ Larry.”

“Jenny Jones, we have a problem”……this is WAAAY too good and WAAAY too easy! So much for swearing off bread!! Measured everything by weight using KA’s bread flour. Was probably a bit ‘heavy’ on the yeast, but no issue. Added 1+ tbsp of organic honey as last ingredient before it rested for 3 hours, then patted it out and sprinkled some cinnamon-butter-sugar-flour before the final roll-up. Will make wonderful French toast, but probably won’t last that long! Tomorrow ….another day…..another loaf.”

“Wow!!! I was so surprised as to how good my first apple pie came out. I even treated myself to my own personalized pie dish and waited two years to do it!!! Duh!! (I have also never even tasted anything Polish) I am Italian and so that is my preferred menu. I “Googled” Polish food and your youtube came up. I can’t tell you how easy you made making stuffed cabbage rolls. I watched your vid about four times and then made then without a hitch. They were delicious. DAVID MADE MY POTATO PANCAKES

“Pics of potato Pancakes at the start of frying, in an electric skillet; and a pic of the finished pancakes with the rest of dinner: Kielbasa and Sauerkraut, Mustard, Applesauce, Sour Cream served on the side to take care of individual taste sensibilities. As you can see, I use a less oil than many recommend. Still it needs to be there for the pancakes to finish brown and crispy. I get four generous pancakes from two potatoes. ~ David Kapral.”
