“Hi Jenny..again, yr no knead bread is a most wonderful & quick recipe that you have shared. In my latest baking, instead of using (hot) tap water, I substituted the saved (reheated) water from boiling potatoes. The starch from the potatoes added a “nice” flavour to the no knead bread & created a most delicious bread. I used my Kitchen Aid cast iron pot (fm CTC) but upped yr ingredients to 1 1/3 times eg 4 cups flour, 2 C potatoe water etc to fill my oval pot. Ciao fm Kitchener.”

“Hi Jenny, I made your chocolate zucchini cake recipe. I tweaked it, using half a cup of coconut flour in place of regular flour. I think my zucchini was a bit dry and added a couple of tablespoons of water. I think I might add 2 tablespoons of cream cheese to add a little more moisture to the mix. Or serve with a dollop of whip cream or vanilla ice cream. I also used a bundt pan – will need to double the recipe to have it a traditional size bundt cake. Mine is a little shorty as you can see! “I Think it’s the Aldi Yeast ?- Well, bummer.  I have tried Whole Foods to Fresh Market, Publix to Kroger, Sprouts to Walmart, Target, and beyond.  NO yeast to be found, but finally found some at Aldi. Alas, no Gelson’s here and I don’t know if this yeast is old because the date is funky plus it’s made in Turkey!  Oy vey. Anyhoo, this is the wheat bread rise after 45 minutes.  Bummer! What a waste. ~ Oh, I’m so sorry. I feel your pain, I really do. My only suggestion is to proof the yeast (google “how to proof yeast” and maybe it will be good and something else was the problem, possibly the liquid wasn’t warm enough. Meantime, you could still leave it out overnight to see if it rises (nothing to lose). ?~ jenny“Well, it’s a miracle! I thought my low rising dough might be a throw away, then saw again that the bread rises a lot in the oven. So I tossed it in.  Indeed! “I made this this morning and will have it for lunch…anyone know how to reheat it?? I’m assuming put it back in the oven at 350 might work (?) Thanks you Jenny…your recipes are the best ?”

~ What a beautiful pie, thank you! I reheat by putting foil inside the pan and pushing it up against the exposed  filling so the filling stays put,  and I leave the top crust exposed. I am thrilled every time someone sends a photo of one of my recipes. My favorite this week is from Valerie, who staged a beautiful table to show off her quick & easy chocolate cake. Actually she made two, one with sugar and one with splenda and she noted that they, “seemed the same in texture and flavor.” Good to know. Thank you, Valerie.

“Dear Jenny, These were AMAZING!  I used cabbage from my husband’s garden and fresh tomatoes as well.  My family loved it.  The pic is taken before they were baked in the oven.  Love the tip for placing cabbage leaves on top before baking.  They were so moist and yummy.   • If you don’t aerate your flour your dough will be too dry.
  • Aerating is NOT the same as sifting.

Much healthier for my hubby and myself too, as always your bread recipes are fabulous! Your SIMPLE WHITE BREAD (with egg) is one of my hubby’s favorite, it’s always in our bread drawer. I also make your EASY DINNER ROLLS often. I mix up ideas though, like these were made into a cloverleaf style. Sometimes I add seeds to our rolls….sesame seeds, poppy seeds, sunflower seeds or flax seeds. “Hi Jenny.  I have made your Greek lemon chicken with potatoes and green beans a couple of times in the oven and love it. Today I decided to toss everything in the slow cooker instead and it turned out just as delicious, with the added bonus of a lemony broth!  I had some grape tomatoes I needed to use up so tossed them in the last half hour or so of cooking. I followed your recipe and let the chicken and potatoes marinate before tossing into the crock pot with the marinade, cooked it on high for an hour, then added the green beans for another 2 hours.  This could all be cooked on the low setting but for more hours of course.

PS The crow on the counter is in memory of my late father and grandfather.  Grandpa immigrated from Croatia in 1903 at the age of 26, then met and fell in love with my grandmother, who immigrated from Poland.  You can bet I will be making some of your Polish recipes; I miss her cooking. “Hi Ms Jones – Jenny – I found your YouTube page and blog just recently and was surprised to hear about your Polish background, despite having obviously known of your fame in other endeavors and TV. I am also of Polish immigrants. My Father was the cook (as yours). He cooked in the Army and my mother was so tired with 7 kids (me the youngest), she hated cooking and it tasted like it.

I am so glad I found your recipe site as I am also a Foodie and I teach nutrition (I believe in Food as Medicine) to my patients as a Registered Nurse case manager and health coach working for a wretched insurance company (but it’s my job whereas I also started in acting, theater and writing). I do believe that home cooking is a factor in health:  people who cook at home using fresh ingredients are 40% less likely to develop health issues.

My husband and I are embarking on growing our own mushrooms this year. (the new buzz ingredient for health — cauliflower now taking a back seat — LOL).  I do a lot of canning in the Fall depending on the crop we get from our small garden, and we utilize drying foods as well. I make pierogi every year for family (Christmas Wigilia)  and friends and we make a party out of it, plus on Easter, the beet-pickled eggs and Babka are traditional musts.

I usually don’t take photos of my disasters although Ive had many (NEVER put Pyrex on a hot burner, eg — a Rib roast disaster), but I thought I’d share at least this with you .  I tried to attach others but too big. Today, I made your 90 minute Wheat Bread recipe.  Ive been making my own breads now for about 3 years (the Dutch oven artisan bread recipe is a winner) and I like to also meld and merge other ethnic cooking into my craft (exploring Thai and Indian and Asian lately).  The easy rise time with your bread recipe helps when you “forget” to start your “starter” the night before.  I also like controlling my own ingredients when store-bought these days is poison.

I appreciate your stamina in your career and hope you are living a lovely happy life after so much hard work and dedication to your causes. Easy Crispy Focaccia Bread

Easy Crispy Focaccia Bread RecipeThis is no ordinary focaccia. It’s not the soft kind that you bake in a pan. This is focaccia the way I like it: thin and crispy. It’s like a slice of pizza without the pizza stuff. I have only been able to accomplish this using a baking stone and a pizza peel, and a very hot oven. That’s how they make those great pizzas at Italian restaurants. They use very hot ovens, and slide the pizzas in using a wooden peel like this.

Parchment paper is a must for two reasons. One, it makes pressing the dough into a circle easier because the dough sticks to the paper. And two, it makes it a breeze to slide the dough onto the hot baking stone. The parchment will turn dark from the high heat as you can see in the recipe photo. My focaccia recipe is quicker than most, taking only 90 minutes start-to-finish. As long as I don’t need my oven for cooking dinner, I can make this incredible focaccia and time it to be ready to eat with our salad.

You can make traditional rosemary focaccia or use a store-bought blend of Italian herbs. I actually use both. I mix them into the dough for lots of Italian flavor, and then put a little more on top. Some of the  spices on top fall off but the dough has enough flavor inside to make up for any of that. I like the result better with bread flour so that’s the only one I use.

Another good thing is that if you don’t eat it all (what are the chances, really?) you can re-crisp it the next day directly on the oven rack at 350 degrees for about 8 minutes. It has never taken me more than 90 minutes to make this fabulous crispy Italian focaccia. Click here for the recipe. – Jenny Jones

I Made My Favorite Chocolate Cake

Sweet Potato Chocolate CakeI realize that my “Quick & Easy” chocolate cake is the most popular and I often make it when I need cake fast. Some days, we just need cake fast! But sweet potato chocolate cake is still my favorite. It starts with a whole sweet potato, which I cook and mash with a fork. I used to boil it but now I chop and steam the sweet potato. This way it retains more vitamins and I like that this is a dessert with some nutrition. And because sweet potatoes are so sweet, this recipe uses less sugar.

This chocolate cake always turns out moist and delicious. I frost most of my cakes right in the pan, only on the top. If you want to try my favorite recipe for sweet potato chocolate cake and get a little vitamin A in each slice, click here.

I’m Always Learning

Jenny Can Cook Best RecipesThese are just some of the recipes that I have either improved or simplified since they were originally posted. I’m always learning and improving my skills so if anyone is using a recipe that was posted a while ago or if you printed it some time ago, please check the “Recipe Changes/Fixes” category in my blog.

So far I have made changes to about 100 recipes but many of the changes are minor, like increasing salt or reducing sugar but others, like my 15-Minute Veggie Pasta, now use an easier, faster, all-in-one-pan method. I’m always looking for ways to make something healthier or faster or to simplify the process so every time I cook, if I try a better way and it works, I adjust the recipe and share the exact changes I made in the blog.

I encourage all of my regular cooks to occasionally check the “Recipe Changes” category here in my blog to make sure you are using the newest and best version of each recipe. Healthy Mexican Black Bean Casserole

Healthy Mexican Black Bean CasseroleI love casseroles. Cook once / eat twice /or three times. And casseroles are always flexible: a little more of this, a little less of that, and they still turn out. This is a little like my Spicy Mexican Casserole but made not spicy using an Anaheim pepper, with corn tortillas and added vegetables. I always try to include as many vegetables as possible in every meal, besides the salads I make every day.

Vegetables are the key to good health so besides lots of fresh tomatoes, I include antioxidant-rich bell pepper along with the Anaheim green chili pepper. Anaheim peppers (also called long peppers) are green and measure about 7 inches long.These peppers are great for anyone not liking anything too spicy but who does like a flavorful pepper. Of course you can use Jalapeño peppers instead but the Anaheim pepper is perfect for me.

This recipe is high in fiber from the black beans and corn tortillas. All corn tortillas are not the same, in fact they can be very different. I tried Whole Foods 365 brand and they were dry and disappointing. My preference is Guerrero brand if you can find them.

You can make lots of variations with this recipe, using cheddar cheese instead of monterey jack, pinto beans instead of black beans, and you can add spices if you like, but I do recommend staying with the fresh tomatoes. They add moisture and fresh taste to this easy casserole.

UPDATE June 3, 2020: I found myself using less and less tomatoes in this recipe and I now prefer it that way. It also means less chopping! 👍 I suggest trying it with only about 3/4 pound of tomatoes.
