Plain & Simple Taco Salad
My recipe uses only 6 main ingredients + spices, onions & garlic. We love this dinner so much we have it once a week for movie night. - Jenny Jones
Ingredients:
- Meat Mixture:
- 2 teaspoons olive oil
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1/2 pound lean ground beef
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon oregano
- 1/8 teaspoon salt + pepper to taste
- Other Ingredients:
- 2 large tomatoes
- 3-4 cups chopped lettuce
- 2 Tablespoons olive oil
- 2 teaspoons lemon juice (1/2 a small lemon)
- 1 1/2 cups crushed tortilla chips
Instructions:
- Chop tomatoes and set aside in a small bowl.
- Heat oil and saute onions & garlic over med-high heat for 1 minute.
- Add beef and spices. Cook & stir 4-5 minutes until no longer pink. Reduce heat to simmer to keep warm.
- Chop lettuce and toss with oil and lemon juice.
- Add remaining ingredients, combine well and serve.
Optional Additions: Diced avocado, chopped onion, shredded cheese, sour cream, or beans.
