Plain & Simple Taco Salad

My recipe uses only 6 main ingredients + spices, onions & garlic. We love this dinner so much we have it once a week for movie night. - Jenny Jones

Makes: 2 servings

Plain & Simple Taco Salad

Ingredients:

  • Meat Mixture:
  • 2 teaspoons olive oil
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 pound lean ground beef
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon oregano
  • 1/8 teaspoon salt + pepper to taste

  • Other Ingredients:
  • 2 large tomatoes
  • 3-4 cups chopped lettuce
  • 2 Tablespoons olive oil
  • 2 teaspoons lemon juice (1/2 a small lemon)
  • 1 1/2 cups crushed tortilla chips

Instructions:

  1. Chop tomatoes and set aside in a small bowl.
  2. Heat oil and saute onions & garlic over med-high heat for 1 minute.
  3. Add beef and spices. Cook & stir 4-5 minutes until no longer pink. Reduce heat to simmer to keep warm.
  4. Chop lettuce and toss with oil and lemon juice.
  5. Add remaining ingredients, combine well and serve.

Optional Additions: Diced avocado, chopped onion, shredded cheese, sour cream, or beans.
