My Simple Lentil Soup

Simple Pureed Lentil SoupSome days, a big bowl of this thick and hearty soup is all I need for dinner, with one of my crusty rolls of course. Lentils are high in protein, low in fat, and have lots of health benefits. I used to have it without pureeing but once I pureed it in the food processor, I never went back. It comes out so thick and creamy, perfect for a cold winter day.

I use unsalted chicken stock but vegetarians can use vegetable stock. I sometimes add some chopped baby spinach in that last couple of minutes if I have it. Fast Vegetable-Bean Chili

Fast Vegetable Bean ChiliHow many healthy vegetables can you add to a pot of chili? Six! Celery, carrots, bell peppers, zucchini, tomatoes, and fresh spinach. If you count the onions and garlic, you have eight! That’s a lot of vitamins right there. Vegetables are a lifeline to good health so this meatless chili is a good way to get a variety of veggies in one delicious meal. Then there are two kinds of beans for plenty of protein and fiber. Whip out a couple of my no knead crusty rolls and dig in!! ????

We don’t like spicy food and I cannot find a mild chili powder so I make my own mixture and it’s not spicy at all. My chili powder recipe uses paprika, cumin, oregano, garlic & onion powder, allspice, and cloves.

A couple of notes on this chili: This is a fast recipe so the veggies must be cut small so they cook through nice and soft. Cut them all in 1/4-inch pieces. To save time, prep only the onion, garlic, carrots, and celery to start. Prep the rest while the chili cooks. You may have to adjust the amount of chili powder to your taste. Healthy Mexican Black Bean Casserole

Healthy Mexican Black Bean CasseroleI love casseroles. Cook once / eat twice /or three times. And casseroles are always flexible: a little more of this, a little less of that, and they still turn out. This is a little like my Spicy Mexican Casserole but made not spicy using an Anaheim pepper, with corn tortillas and added vegetables. I always try to include as many vegetables as possible in every meal, besides the salads I make every day.

Vegetables are the key to good health so besides lots of fresh tomatoes, I include antioxidant-rich bell pepper along with the Anaheim green chili pepper. Anaheim peppers (also called long peppers) are green and measure about 7 inches long.These peppers are great for anyone not liking anything too spicy but who does like a flavorful pepper. Of course you can use Jalape├▒o peppers instead but the Anaheim pepper is perfect for me.

This recipe is high in fiber from the black beans and corn tortillas. All corn tortillas are not the same, in fact they can be very different. I tried Whole Foods 365 brand and they were dry and disappointing. My preference is Guerrero brand if you can find them.

You can make lots of variations with this recipe, using cheddar cheese instead of monterey jack, pinto beans instead of black beans, and you can add spices if you like, but I do recommend staying with the fresh tomatoes. They add moisture and fresh taste to this easy casserole.

UPDATE June 3, 2020: I found myself using less and less tomatoes in this recipe and I now prefer it that way. It also means less chopping! ­čĹŹ I suggest trying it with only about 3/4 pound of tomatoes.

My Go-To Dinner

Easy Veggie Fried RiceI’ve been busy the past month and when there’s not much time to cook, I still cook. And tonight I made my veggie fried rice. It’s my go-to dinner when I want a quick and healthy meal. I always have broccoli and peppers on hand I always keep frozen peas in the freezer.

It’s a light meal with protein from the eggs and a bounty of nutrients from the vegetables. This time I used broccoli, spinach, peppers, and peas. We had my peanut butter cookies for dessert.

My Spicy Vegetarian Mexican Casserole

Easy Mexican Food RecipeI love this simple vegetarian casserole. It’s a healthier┬á way to enjoy Mexican food because it uses fresh tomatoes, whole wheat tortillas. I use my own homemade tortillas, the whole wheat version, and they turn nice and soft in this dish. I wanted to try it with store-bought tortillas but could not bring myself to buy them after reading the ingredients. If you make the tortillas ahead of time this meal can be made in about 45 minutes.

If you like things super spicy, you can switch from jalape├▒o pepper to a spicier one like serrano or the super hot habanero. For me, the jalape├▒o version is perfect – not too spicy at all. And I always say it: don’t use pre-shredded cheese. It will never melt like fresh cheese because they add some type of stabilizer to the pre-shredded kind. Veggie Fried Rice

Best Recipe Veggie Fried RiceThere are three reasons why I love this recipe:

  1. It’s vegetarian.
  2. It has lots of superfood veggies.
  3. It takes less than 20 minutes to make.

This is a light, easy supper that I love to make, depending what I have on hand. My favorite combo is this one with broccoli, baby spinach, bell peppers, and peas. But I have also made it with other vegetables, sometimes broccollini instead of broccoli, Swiss chard instead of spinach, or other subs like asparagus, shredded carrots, bok choy, or Chinese snow peas, so you see it’s just a great way to get a variety of cooked vegetables in one meal. But I always use at least four different veggies.

Cold cooked rice works best so I usually cook the rice the day before, and refrigerate it overnight. Mostly I use Uncle Ben’s converted rice but I have also made it with brown rice. Either way, if your rice is cooked in advance, this is a super-quick meal. Be sure to have everything ready before you start because a stir-fry means you don’t leave the pan once you start and it cooks in less than 10 minutes! Red Beans & Brown Rice

Easy Recipe Red Beans and Rice

The best thing about this simple meal is that every single ingredients has health benefits. Brown rice has fiber and lots of minerals including ┬áselenium, which has been shown to protect against cancer. Beans also have soluble fiber to lower cholesterol as well as calcium for bones. And don’t get me started about all the antioxidants in colored peppers! So here is an easy vegetarian recipe that’s super healthy. It’s high in protein and fiber and oh yes… flavor!

By the way, high fiber meals keep you feeling full longer and that helps with weight loss. This is a recipe you can easily make your own with more jalapeno pepper for added heat, toss in your favorite extra spices, ┬áor use a different kind of bean. I really like red beans in this dish but I can never find canned red beans at the grocery store. Whole Foods carries one by Westbrae that I prefer so if you can find it, I think you’ll like the meaty texture of these beans.

But a close second would be red kidney beans and even black beans would work. By the way, black beans are the highest in antioxidants of all beans. Basically you can’t go wrong with any kind of canned beans in this heart-healthy, easy recipe.

Let’s talk about rice for a minute. Brown rice has more nutrients and fiber than white rice but if you’re short on time, you can make this dish with converted rice (I like Uncle Ben’s). You won’t get as much fiber but you’ll still get protein, iron, and folate from converted rice and all the benefits (including fiber) of the beans and peppers. Both brown and white rice are gluten free.

Easy Vegetable Bean Pasta
