Whole Wheat Chocolate Chip Cookies

Healthier Chocolate Chip CookiesI always look for a healthier way to make all the favorite things we like to eat and chocolate chip cookies are at the top of my “favorite things to eat” list. I posted my recipe some time ago but when I baked them today, I made a couple of small improvements. I reduced the oil and salt a little and I prefer them the new way. (the changes are noted in the recipe).

Anyone looking to bake with whole grains can make my version that uses part whole wheat & part all purpose flour. But these healthier cookies can also be made using only all purpose flour but honestly, there’s not much difference so I say go with the whole wheat version.

While most chocolate chip cookie recipes start out with a stick of butter, my recipe uses only three tablespoons of butter. I’m still not convinced we should be eating lots of butter as some people believe but when I use butter, I’m going with the grass-fed kind.

I always put nuts in these cookies and whether you use walnuts or pecans, I highly recommend toasting the nuts first. Toasting intensifies the flavor and it will add a lot to these delicious cookies, especially pecans. For chocolate chips, the darker the better for some health benefits.

Peanut Butter Dark Chocolate Chunk Cookies

Peanut Butter Chocolate Chip CookiesIsn’t everything better with chocolate? Today I made my incredibly easy peanut butter cookies but upped the game by adding dark chocolate chunks and extra peanuts. Oh My! They are so good and so easy. These peanut butter cookies have no flour so they’re even gluten free. This is a simple one bowl recipe and I just added some chopped up 70% chocolate bar and some additional chopped salted peanuts. I don’t think I’ll ever make them plain again.

You could use chocolate chips but using a plain dark chocolate bar is a healthier choice. Just use my original recipe for peanut butter cookies and add about 1/4 cup of chocolate chunks or peanuts or 1/4 cup total mixture of both.  Click here for the recipe. – Jenny Jones

Peanut Butter Chocolate Chip Cookies

Peanut Butter Chocolate Chip CookiesThis may be the easiest cookie recipe ever. No mixer, no flour, no butter, and only five ingredients. Well… make that six. It’s my peanut butter cookie recipe but this time I added chocolate chips. Wow! They were so good I made them twice this week. It’s a winning combination: peanut butter and chocolate, and even healthier by using dark chocolate chips so I just had to share my “new” recipe.

This recipe is so flexible that next time I might add some extra chopped peanuts too. This simple recipe is so easy, even if you don’t bake, you can make these cookies. – plain or with chocolate chips.  Click here for the recipe. – Jenny Jones

My Everyday Cookies

Healthy Whole Grain Cookies Recipe

These healthy cookies are always on hand in my kitchen because I love sweets but they have to be as healthy as I can make them. And these are. They are 100% whole grain made with whole wheat pastry flour and oats. Then I add oil (I prefer avocado oil these days) and this is a cookie I can eat every day (and I do!). The truth is that most of the time, dessert in my house is just a cookie and it’s this cookie more than any other. It’s sweet and satisfying and might actually do you some good. It has lots of fiber, heart healthy fat, and no butter or white flour. Did I mention a few mini chocolate chips?

I tried to decide what to call this… Oatmeal Cookies, Whole Grain Cookies, Healthy Cookies, Cookies I Eat Every Day, but then I settled on Everyday Cookies because I have them just about every day. Sure, they are dessert after dinner but why not after breakfast? They have oats and whole grains and nuts – isn’t that what’s in a granola bar? And my granola bar recipe has chocolate chips too.

These are some crispy cookies, which is good because they keep really well. I keep them in a covered container, mostly in the fridge by the second day, but they don’t last long. With two of us here they disappear fast and when they’re gone, I make more. Healthier Chocolate Chip Cookies Recipe

These are the only chocolate chip cookies I make because they use less butter, less sugar, have more fiber and heart-healthy fats, and they are delicious! Most recipes call for a 1/2 cup of butter but mine… 3 tablespoons! Most recipes use all-purpose flour but mine… include whole wheat pastry flour. And guess what else? Olive oil! You don’t have to give up chocolate chip cookies when you can make them this much healthier. I’m using extra light olive oil in most of my baking these days. These cookies have lots of toasted nuts for extra protein and the darkest chocolate chips I can find.

At any given time there are cookies in my kitchen (and the freezer) and it’s what we mostly have for dessert. I love sweets but I also want to eat as healthy as I can so I am constantly looking for ways to make desserts healthier and this dark chocolate chip cookie is the perfect example. You don’t even have to mention that these are healthier, just serve them and watch everyone ask for more. Easy Peanut Butter Cookies

Wow! I love this incredibly easy recipe. It’s so simple. One bowl. No mixer. No shaping. And no cleanup if you use parchment paper. There is no butter and no flour is this simple cookie recipe. And my version has less sugar than most. Wait ’til you try one – the taste is out of this world!

Even the most amateur cook can’t mess this up. Here are the steps: 1) Mix ingredients together in a bowl. 2) Drop on sheet and bake. 3) Done.

I’ve always used natural peanut butter, like Laura Scudder’s or Santa Cruz organic, but always chunky. You can use smooth… but why? With chunky peanut butter, you get some nice peanuty crunch with every bite.
