My Lemon Brownies – Gluten Free!

Gluten Free Lemon BrowniesGood news for gluten free cooks! I was finally able to get the flour some people have mentioned in their comments and I tried it out with my lemon brownies. They turned out great – I saw no difference in taste or texture. This recipe is exactly the same as my regular lemon brownies only with swapping the regular flour for Bob’s Red Mill 1 to 1 gluten free baking flour. (This is not a paid endorsement, just a way to share a good recipe that’s gluten free.)

I have only made this recipe with this particular flour and can’t say how it will work with other gluten free flours so it you try it with a different brand of gluten-free flour please comment here on your results. I’m really happy to be able to share this very easy and very popular recipe for lemon brownies (some people call them “yellowies” ?) for everyone who has asked for more gluten-free baking. Lemon Brownie Update

Best Lemon Brownies RecipeI made lemon brownies today and decided to experiment with a larger pan, using a 9 x 9-inch square instead of the 8-inch square. Well, this recipe is indestructible. The brownies turned out great, even a little fudgier than the original. Even an amateur baker can’t mess this up. I’ve made these easy lemon brownies with all purpose flour, with whole wheat pastry flour, once when I was out of yogurt I used sour cream instead and no matter what, they always turn out. And it’s one bowl!

Easy Fudge Brownies Without Butter

Dark Chocolate Brownies Recipe

When they say dark chocolate is good for you they mean dark. Like 70% dark. So that’s what I put in my easy fudge brownies. I start by melting a dark chocolate bar and it makes the most intense brownie! With no butter!  And wait ’til you see how easy this recipe is. Dark chocolate bars are available in most grocery stores and they sell them at World Market (they’re cheaper there). To get health benefits, it should have at least 70% cacao.You can find bars from 68 to 72% that will work great but I try to keep it at 70-72%. I’ve used Scharffen Berger and World Market brand and there’s no difference in the end result.

Here is what I learned making these delicious brownies: You do not need butter to make rich-tasting, gooey, fudgy brownies and baking without butter is always my priority. (You can use melted butter in place of the oil if you like) I  did a taste test at home and asked my man to try one that had butter and one without and he could not tell the difference. Besides making desserts without butter I always try to use whole grains when possible but that did not work here. I tried and was hopeful but they turned to mush.

So the best I can do is no butter and lots of heart-healthy dark chocolate. Most brownie recipes use a stick or two of butter so if you need a brownie, this one is a better choice than one loaded with saturated fat. My recipe uses extra light olive oil instead of butter but you can use any vegetable oil you choose. And the nuts are optional but nuts are nutritious and full of protein and healthy fats so include them if you can. And toast them first – what a difference! The extra chocolate chips, well… that’s up to you and the darker the better.

One thing about melting chocolate: Chocolate is delicate and burns easily so I melt it in a saucepan but with oil added and over very low heat so it doesn’t burn. It takes about 2-3 minutes to melt but needs to be stirred because chocolate tends to hold its shape when melted and you might not know it’s ready until you stir it. The other options for melting are the microwave (which I have never done) and a double boiler (too much trouble).

This is the second brownie recipe I’ve posted. The other whole wheat brownie is not as fudgy but still nice & chewy and also made without butter, but it’s 100% whole wheat. Both my brownies are easy to make but this simple recipe is good for beginners because it uses just a few ingredients and no mixer is needed. In fact, this batter should only be mixed by hand and not over-mixed.  Oh, and don’t over bake the brownies! They should feel a little soft in the center when they’re done so don’t bake any longer than 20 minutes! Okay, that’s all. Click here for the recipe. – Jenny Jones

Happy Birthday, Sweetie.

Best Recipe Fresh Strawberry Cake Today is my sweetheart’s birthday and he, again, asked for his favorite cake. It’s my fresh strawberry cake and oh my… it is so good! It weighs almost six pounds! That’s because it uses two pounds of fresh berries, two layers of white cake, and a whole pint of whipping cream.

The strawberries are sliced and mixed with sugar to bring out lots of their juices and then you build the cake. It’s a layer of cake, covered with half of the macerated strawberries as the juice quickly soaks into the soft cake below, and you cover the berries with freshly whipped cream. Don’t even think about using Coolwhip!

Then you add the second layer of cake, top it with the remaining strawberries and juice, which soaks into the top layer of cake. Now you cover the whole thing with whipped cream. OMG!!

Double Chocolate Cookies

Double Chocolate Chip Cookies

There are three ways to make these cookies depending on the amount of flour you use. You can make them more chunky and firm or softer and spreadable.  My original recipe calls for 1 1/4 cups of all purpose flour. But you can use less flour for a softer cookie. See my examples below:

You can never go wrong with a chocolate dessert. I always use Dutch processed cocoa for two reasons. One, it’s less bitter than regular cocoa and two, it produces a rich dark color as you can see. It’s not always easy to find but right now my store carries Droste brand cocoa so that’s what I use. Always looking for ways to reduce saturated fat, I reduced it even more today. Instead of 1/4 cup of butter I used 3 tablespoons and then I increased the oil from 1/2 cup to 1/3 of a cup. No matter how good something sweet looks, if the butter is measured in sticks, I always pass. I know from experience that you can make delicious, healthier desserts with very little and many times, no butter at all. For dinner I made a salad and my vegetable-bean pasta and cookies for dessert. Did I say cookies? I meant “a cookie” for dessert. That’s right. One cookie. That’s my story and I’m sticking to it. ?

I usually add toasted walnuts and pecans to my cookies. The reason for the mixed nuts is I can never decide, plus using both nuts seems to add even more flavors but I always toast the nuts first. In fact, I toast a whole bag of nuts and then keep them refrigerated for all my baking. To learn how to toast nuts, see the “How To” section of my blog. Updated Marble Loaf Cake

Chocolate Marble Loaf Cake Recipe

I just posted the updated recipe for my marble loaf cake that I love so much. I went back to the original way that I was making it, which involved beating egg whites and folding them into the batter at the end. I had eliminated that step to make the recipe easier and less work but after making it a few times, I realized I should have left it alone.

So… good news / bad news. The good news is the loaf is light and fluffy again and the bad news is it takes a little more work – well just the one extra step of beating the egg whites.

If you hate washing pans (who doesn’t?) you will like this. If you do what I do and line the loaf pan completely with foil, you won’t have to wash the pan. And I don’t even grease the foil but you can if you want to. I just peel away the foil from the loaf, after about 15 minutes of cooling. But be careful when putting in the foil and use your knuckles in the corners so it doesn’t tear.

You’ll notice that I beat the egg whites first. When beating egg whites there must be no fat whatsoever in the bowl, not from the yolk or from beaters not are not completely clean. So use your clean beaters on the whites first. Now you can continue using the beaters on the second mixture without having to clean them first. My first recipe had fresh orange zest added and that is still an option. You can add the zest of an orange along with the flour but I like it both ways, with and without the orange zest.

This marble loaf is the first thing I make for company because it makes a beautiful presentation and goes really well with coffee or tea. Fabulous Fruit Pizza

Fruit Pizza Recipe

What can I say? This is the most amazing, dramatic, show-stopping dessert ever! And if you think it looks good, wait until you taste it! Having a barbeque? Going to  potluck?  They’ll remember you forever if you bring this to the table. Fruit pizza is basically a giant sugar cookie (of course, my version is a little healthier than most because I use less butter). You bake and cool the cookie and while it’s cooling, you get all the fruit and glaze ready. Then you build your creation.

It’s perfect for summer parties but I make fruit pizza all year round. In the summer I use peaches, raspberries, blueberries, nectarines, strawberries, and cherries when they’re more affordable (this one has Queen Ann cherries and yellow grapes on the border). In the winter I use bananas, kiwi, papaya, grapes, mango, and whatever else I can find that’s soft and colorful. If you use bananas, make sure to coat them with lemon juice as soon as they’re sliced to prevent them from turning brown.
