I didn’t have any cream cheese. But I wanted carrot cake. My husband said, “How about your chocolate frosting?” (He loves chocolate!) Once I stopped laughing, I decided to make my whole wheat carrot cake with chocolate frosting, knowing once he had a taste, he would agree to never make a baking suggestion again. Well after I ate some of the cake, I had to eat crow. It was delicious!
Homemade carrot cake is a real treat and worth the effort of shredding a big carrot. I’ve simplified my recipe so it works with or without crushed pineapple and this time I didn’t have pineapple either and this cake is really delicious without it, especially with chocolate frosting. I used my 2-Minute Chocolate Frosting and frosted only the top of my cake right in the pan.
Mine is a healthier whole wheat carrot cake make without butter so the only butter here is in the frosting. I sometimes double the frosting, split the cake and make it a 2-layer treat. Blueberries are on sale! That means I need to make my lemon blueberry bundt cake today and I need it in time for dinner. I always made this amazing cake with only 1/3 cup of butter but today I mistakenly used only 3 tablespoons of butter and guess what? It was moist and delicious! This was a good mistake.
OMG – this is so delicious! And now it has even less butter. I use the zest of three lemons and a whole bunch of blueberries (one and a half cups). If you wash the berries, make sure they’re dry before adding them to the batter. Otherwise, they can sink.
It’s the fresh lemon zest that gives all the flavor so don’t skimp on the lemons. When you take the zest off take just the yellow part and avoid the white part, which is bitter.
Start with all your ingredients at room temperature and take your time. It takes 7-8 minutes with an electric mixer to get the batter just right. But what a reward! I like to top my finished cake with a simple glaze made with lemon juice and powdered sugar but you can also dust it with a little powdered sugar. Click here for the recipe. – Jenny Jones
This is the ONLY chocolate cake I make. I took a new picture of my sweet potato chocolate cake which was in my cookbook and is now here on my recipes page. This was one of the most popular recipes in the book and this new photo better shows off the moistness and deliciousness of this fabulous dessert.
You should try serving this cake and then ask if anyone can guess what’s in it. It’s such a rich-tasting cake they might think it has lots of butter but the cake is made without butter and with less sugar than most cakes because the sweet potato is naturally sweet. And you can make it with extra light olive oil! The frosting uses only two tablespoons of butter.
It’s pretty easy to make, too. I just chop and boil the sweet potato and either mash it with a fork or put it through a ricer. (it’s easier to clean the fork!) Then I spread the sweet potato out on a dinner plate to cool while I prep the other ingredients. It’s a one-layer cake to it’s easy to frost since you’re just frosting the top and sides. I refuse to give up my desserts so I make them as healthy as I can. This is a healthier chocolate cake and it’s an easy recipe. Good news for me: I had to make the cake to take the picture and there are still 4 slices left!
