Parchment Paper vs. Wax Paper

Are parchment paper and wax paper the same?

My response… Parchment paper and wax paper are very different. Wax paper is actually coated with wax and not intended for use in the oven. The wax would probably melt in there anyway and wind up on your food. It’s good to use for messy work like rolling dough and breading or you can sift dry ingredients on it to save washing a bowl. Parchment paper is grease and moisture-resistant and is made for use in the oven, perfect for lining pans and baking sheets for easy removal. If your parchment paper sticks, it’s likely an inferior quality paper. The only brand I use is Reynolds and it never sticks.

    This is going to seem like a weird question but here goes. I have made the Dutch oven bread of yours and love it. My problem is that I’m age 87 with false teeth and the crust is too hard for me. Can the time and or heat be adjusted to make a softer crust and still have the inside well done? Thank you!

    Your no knead bread was great. Whenever my friends post something/anything on facebook, I take that opportunity to drop a picture of my loaf of no knead bread for no reason at all in the comments. LOL (Actually, there is a reason, the reason is I’m so proud of it!!)

    I have a friend that lives in the Yucatán and does not have a normal baking oven. Can you give me an idea about what tools and baking accessories might be the basics to acquire in order to make some of these bread recipes. Are there ways to acquire the heat needed to bake? I would appreciate you comments.. i guess in a WAY BACK to basics type sense.

    Hi I can’t get bread flour of any kind. The shelves are empty! Can I add gluten to all purpose flour and wheat flour?? I have a flour mill I can use.

      You can make bread with all purpose and with wheat flour without adding gluten.

    Today I make your paczki’s The dough was beautiful and the paczki’s came out fabulous. I used your custard filling and also a strawberry filling. My sister’s the baker in the family but not for long with delicious and easy recipes like yours. Thank you for sharing. I hope your family appreciates theses wonderful treats.       I was incredibly lucky to have had my talk show and even today, I find my self thinking, “I still can’t believe I had my own show!” The success of the show has allowed me to give back and to do things I love. I only wish youtube had been around in the 90s so we could all watch some old shows. I would love that.

    Silicone baking pads work like parchment paper (up to about 450) and can be reused. I have one with a ruler on it, so it’s easy to roll out the 8×10 poppyseed roll.
