
Another thing I always have on hand is my (low fat) sour cream. Don’t all Polish people have sour cream at home? It seems like we eat everything with sour cream… cabbage rolls, pierogi, borscht, and potato soup. I always stir sour cream into this soup just before eating and if you want the full Polish experience (zupa ziemniaczana ~ but we called it zupa kartoflana) top it with a little freshly chopped dill. Hi Jenny – Potato soup is very easy to make. I usually like to leave the skin on- whenever possible after washing. Yukon Gold is the potato of choice for me. The skin is so thin & doesn’t really need to be removed. The blender doesn’t mind. I’m adding some chopped ham along with the sour cream & dill – yummy.
Bacon bits would taste good, too.

You are correct on the sour cream. I, too, am Polish and I keep both the “light” and “regular” versions of sour cream in the refrigerator.
