Turkey Breakfast Patties

All the flavor of breakfast links without any of the bad stuff. This recipe is not as good with ground turkey breast – it’s too dry but good news: dark meat is nutritionally superior to white. Rather than tossing in the spices, it’s better to distribute them all over the meat for easier mixing. - Jenny Jones

Cook Time: 7 minutes

Total Time: 15 minutes

Makes: six 3-inch patties

Turkey Breakfast Patties

Ingredients:

  • 1 pound ground dark meat turkey
  • 1/2 cup shredded apple (I use granny smith or gala)
  • 2 1/2 teaspoons rubbed sage
  • 3/4 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • pepper to taste

Instructions:

  1. Place turkey and apple in a bowl.
  2. Add spices and combine well using a fork.
  3. Shape into six 4-inch patties (they will shrink when cooked).
  4. Brown both sides in an ungreased non-stick pan or in a bit of oil, over medium-high heat for 5-7 minutes, until no longer pink inside or the internal temperature is 165 ° F.

    Hi Jenny, I love thyme but I’m not a fan of sage, although I could use a smaller amount for these Turkey Breakfast Patties. What other herb would substitute for sage in this recipe?
    We love your recipes. Tomorrow I’m making your Mac n Cheese for Grownups and your Salmon Cakes. I’ll let you know how it turned out.

      Sage is really key to breakfast sausage and patties. I don’t know of a substitute but you may be able to find some substitution ideas on the web.

    Jenny, it’s impossible to find dark meat turkey except in November where I live. Do you think chicken thighs will be a good substitute?

    I am very disappointed that my pattes turned out yucky and very dry. I told the butcher from the market that the recipe called for DARK turkey meat. He than explained that the market does not carry DARK MEAT. Huh!!!! Therefore, I should try using just regular turkey meat since it consists of both of DARK + White meat. That only white meat from a turkey is the turkey breasts. In fact, I went to several markets to search for DARK meat in a package,but to no avail. Not even my Health Food store carried Dark turkey meat in a package. In addition, the Apple was GMO because it did not give any flavor to my patties. I now know that I must ask the butcher to grind the meat from turkey LEGS or THIGHS in order to get true DARK meat. I will also purchase an ORGANIC Granny smith Apple!!

      The butcher at my store tells me that unless ground turkey is marked “white meat” then it’s dark (but maybe it’s just at that store). I hope your butcher can grind some for you. And I agree with you about apples. Most of them don’t taste like they used to. I hope you get better results next time. I had these yesterday and love them.
