One Pan Spaghetti With Beets

TIPS: You'll need a pan at least 8 inches across to fit the spaghetti which you break in half. Use a box grater to shred the beets. Stirring is important so the spaghetti doesn't stick. - Jenny Jones

Cook Time: 10 minutes

Total Time: 18 minutes

Makes: 4 side servings

One Pan Spaghetti With Beets

Ingredients:

  • 2 teaspoons olive oil
  • 1 clove of garlic, crushed

  • 2 cups peeled & shredded raw beets (one 6 ounce baseball size beet)
  • 1 1/2 cups water
  • 5 ounces spaghetti, broken in half
  • 1/4 teaspoon salt + pepper to taste

  • 2 Tablespoons Parmesan cheese

Instructions:

  1. Place oil and garlic in a sauté pan. Bring to medium-high heat.
  2. When garlic starts to sizzle, cook & stir for 1 minute, watching not to burn.
  3. Add shredded beets, water, spaghetti, salt & pepper. Stir well.
  4. Bring to a boil, cover and reduce heat. Cook for 10 minutes, stirring well every 2-3 minutes.
  5. Stir in Parmesan cheese and let stand 5 minutes before serving.

      I break it to fit in the pan. If your pan is large enough, you can leave it unbroken.

    I miss seeing you on You Tube. I keep checking to see if you have any new recipes videos. Your cheerful personality brightens my day.

    I have made several of yours recipes and they have become regular food dishes at my house. I especially love the Potato Prorgies. I can’t make those too often because I end up eating most of them.

    I don’t have a printer so I keep going back on You Tube to copy down recipes. Each time I have to laugh when you spank your dough!

      Pretty tasty to me, so why not with spaghetti 🙂
