Pan Fried Turkey Meatballs

You'll need a pan that measures at least 9-inches across the bottom with a tight fitting lid. I use my own homemade bread to make fresh crumbs, white or soft whole wheat, crusts removed. No food processor? Just cut the bread into very small pieces. - Jenny Jones

Makes: 16 meatballs

Pan Fried Turkey Meatballs

Ingredients:

  • 1 cup fresh bread crumbs, white or soft whole wheat bread (2 slices)
  • 2 Tablespoons whole milk (3 Tablespoons if using whole wheat)
  • 1 egg
  • 1 clove garlic, minced
  • 2 Tablespoons grated Parmesan cheese
  • 2 Tablespoons fresh parsley
  • 1/4 teaspoon dried Italian herbs
  • 1/4 teaspoon salt + pepper to taste

  • 1 pound ground white turkey
  • 1 Tablespoon oil (I use olive or avocado oil)
  • 1/4 cup water

Instructions:

  1. In a food processor pulse bread to make soft crumbs.
  2. Place crumbs in a bowl and use a fork to mash in the milk.
  3. Add remaining ingredients except turkey. Combine thoroughly.
  4. Add turkey, folding in gently by hand. Shape into 1 1/2-inch balls and set aside.
  5. In a large fry pan, heat oil over medium-high heat.
  6. Add meatballs and cook for 5 minutes, turning constantly to brown all sides.
  7. Add water and cover. Cook, covered, for 3 more minutes. (after 3 minutes if any water remains, remove lid and cook off the water). Meatballs are done at 165° F.

    I made these and wondered why they were not staying together like a “normal” meatball, then I realized I forgot to add the egg. Brilliant. These still came out really good, my toddler inhales them and does not seem to mind his mother’s egregious lack of egg as a binder. Can’t wait to make these the correct way next time!

    Fudged up you should been specific with the oil and water in the ingredients list and said in the list it was for the meatballs, I mixed the water in with the oil in the meatballs, ughhhh

      I’ve been making these meatballs for years, I usually make a creamy mushroom gravy and after the meatballs have been browned, I simmer them in the gravy. You can serve them with mashed potatoes, and vegetables.

    iMHO, If you use panko breadcrumbs they would turn to mush, I am sure bread would be better, why waste your time and effort and be disappointed with the results, I use panko breadcrumbs for breading and frying only
