Homemade Butterscotch Pudding

Look how easy it is to make homemade pudding. I have made this recipe using 1% low fat milk and full fat whole milk but I do not recommend fat-free milk. - Jenny Jones

Makes: 4 servings

Homemade Butterscotch Pudding

Ingredients:

  • 1/2 cup brown sugar, lightly packed
  • 3 Tablespoons cornstarch
  • 1/8 teaspoon salt
  • 2 cups milk (whole milk or low fat)
  • 1 Tablespoon butter
  • 1 teaspoon vanilla extract

Instructions:

  1. In a medium saucepan, combine the brown sugar, cornstarch and salt until there are no lumps.
  2. Slowly whisk in the milk until smooth.
  3. Cook over medium heat, stirring constantly, until it comes to a boil.
  4. Once it boils it will thicken in less than a minute so keep stirring until itโ€™s thick.
  5. Remove from heat and add butter and vanilla. Stir until butter is incorporated.
  6. Pour into serving cups and serve warm or refrigerate.

    Just made this. If you like these sorts of deserts, you will like this, though too much sugar for me. Next time, I’ll half the sugar.

    I love how quick and easy and fairly healthy this is. And also open to variations.

    Where have you been Jenny? All of a sudden your recipes stopped along with the videos. I have every recipe you’ve offered and look always for more. Tonight will try the butterscotch pudding.Hard to keep brown sugar on hand in the hot humid weather.Always gets hard as a rock no matter what suggestions I’ve tried. Any help?

      Keep in a dark cold place and it will not go hard I keep mine there all the time and It never goes hard

      Ps get a dehumidifier lol

      I know this is an old thread but I just found it. Put the clump of hard brown sugar in an air tight container. A 2 quart sealer or ice cream pail works nicely. If it is a big chunk of sugar cut an apple in half and put both halves in the container. Put away for a couple days. For a smaller chunk use just one half. If it is smaller a slice of fresh bread works too. Doesn’t seem to flavour the sugar. Once the sugar is soft again follow Jenny’s suggestion. Thanks to my elderly neighbour for saving a clump of my sugar a few years ago.

      Put hard brown sugar in microwave for a few seconds and it will soften.

    Sounds delicious! I’ll definitely make this, but I’ll substitute non-fat milk. I make homemade puddings – chocolate or vanilla – frequently and always with non-fat milk. Maybe this recipe is different, but I’ll have to find out ๐Ÿ™‚
