Greek Lemon Chicken, Potatoes, Green Beans

It's Greek style chicken! French green beans are thinner and more tender than standard green beans and are a better choice. If using standard green beans, add them after 25 minutes and cook for another 20 minutes (still totaling 45 min). - Jenny Jones

Makes: 2 servings

Greek Lemon Chicken, Potatoes, Green Beans

Ingredients:

    Marinade:
  • 1/3 cup olive oil
  • 1/3 cup fresh lemon juice (2 medium lemons)
  • 2 cloves garlic, crushed
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • Main Ingredients:
  • 2 chicken breasts (1/2 to 3/4 pound total) - cut into 1-inch thick strips
  • 3/4 pound red potatoes - cut into 1 1/2-inch wedges
  • 1/2 pound French green beans

Instructions:

  1. Preheat oven to 425° F.
  2. Combine marinade ingredients in a zip top plastic bag.
  3. Add chicken & potatoes and let marinate while oven heats up.
  4. Pour chicken, potatoes & marinade into a 13 x 9-inch non-reactive baking dish. (I use Pyrex)
  5. Bake uncovered for 30 minutes.
  6. Meantime, place the beans in the same plastic bag and coat them with residual marinade.
  7. After 30 minutes, stir in green beans and cook for another 15 minutes.

Note: For softer green beans, add them a few minutes earlier than stated.

    Holy moly! I’ve made around a dozen recipes from Jenny’s site so far, and never ONCE has anything been disappointing.This recipe is no exception. It was incredible.     I didn’t think you were supposed to use the marinade the raw chicken was marinated in because it could cause salmonella. I always read where you discard the marinade.

      It’s true that you shouldn’t use marinade from raw chicken to baste during the cooking process but all of this marinade is poured in at the beginning with the raw chicken.

    The potatoes stole the show… I could have a whole meal of these potatoes, and I usually don’t like potatoes cooked, only mashed. Ill never cook them differently now.     Trader Joe’s has frozen French beans, I have never found them fresh in the Northeast, maybe I will try Whole Foods, if not will use frozen ones and hope I don’t screw up this wonderful recipe, Have a wonderful Christmas Jenny, thank you for your great recipes, ?????     In the accompanying picture, it looks like the chicken breasts have been cut up (probably to match the size of the potatoes), but it doesn’t say to do this in the recipe. Or are the whole breasts somewhere else on the sheet pan?
