Simple Deviled Eggs
When I serve deviled eggs everybody asks for the recipe. It's so easy, they don't even have to write it down. Two ingredients: mayo & mustard.... and a little salt & pepper. - Jenny Jones
Ingredients:
- 4 hard-boiled eggs
- 2 1/2 teaspoons mayo (regular or reduced fat)
- 1/4 teaspoon yellow mustard
- a scant 1/8 teaspoon salt & pepper to taste
Instructions:
- Slice eggs in half & remove the yolks to a small bowl.
- Add mayo, mustard, a little salt & pepper to the yolks & combine.
- Using a teaspoon or tiny spatula, divide the yolk mixture between the 8 egg halves. (sprinkle with paprika if desired)
- Keep refrigerated in a covered container.

This morning I did hard boiled eggs for devilled eggs. Should I unpeel the egg shells then mix the yolks with mayo etc. now or wait until tomorrow morning before our party at noon?

I saw your video about deviled eggs recently.
I am planning to make 1dozen of devilled eggs for the celebration of life this coming Sunday.
I am wondering how much measurement I will put yellow mustard and mayo for 12 yolks? I do appreciate for your help.

For 12 eggs, (making 24 deviled eggs) I would use 3 Tablespoons of mayo, 1 teaspoon of mustard, and a scant 1/2 teaspoon of salt. Once the mixture is done, you can add a bit more mayo if it’s too dry.
