Quick & Easy Cucumber Salad

To use unpeeled cucumbers it's best to buy organic; otherwise, peel the cucumbers. Stir the dressing really well until the vinegar is clear. - Jenny Jones

Prep Time: 10 minutes

Total Time: 10 minutes

Makes: About 2 cups of salad

Quick & Easy Cucumber Salad

  • 1/2 pound Persian cucumbers, thinly sliced (2 large cucumbers)
  • 1/4 cup thinly sliced red onion

  • 2 Tablespoons white wine vinegar
  • 1 Tablespoon sugar
  • 1/4 teaspoon salt

  1. Scrub or peel cucumbers and slice thinly, no more than 1/8-inch thick.
  2. Slice onions thinly.
  3. Place both in a glass or metal bowl.
  4. In a cup, combine vinegar, sugar, and salt. Stir vigorously until sugar & salt dissolve.
  5. Stir dressing into cucumber/onion mixture.
  6. Serve with a slotted spoon.

Too Much Sugar? Most of the sugar remains in the dressing which is left behind as you serve with a slotted spoon.

Jenny – simply love your recipe for Braided Raisin bread. My daughter gave me the recipe and I have made it three times within a week. Right now I have a loaf in the oven and I can’t wait until it is cool enough to eat. Your video made it so easy. Thank you. Going to try your Chicken Pot Pie tonight.

I always like to try a new recipe at home first before bringing it somewhere, but I never have to do that with your creations. Your recipes never disappoint Jenny. Thank you so much for making your recipes available.
