Oatmeal Fig Bars

This is one of the highest fiber desserts you can make. My recipe takes about 8 ounces of dried black mission figs. I use Sun-Maid or Nutra-Fig brands, both of which are soft. - Jenny Jones

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Makes: 12 servings

Oatmeal Fig Bars

Ingredients:

    Filling:
  • 2 cups finely chopped dried black mission figs (about 25 figs / 8 ounces)
  • 3/4 cup water
  • 2 Tablespoons brown sugar
  • Crust:
  • 1 cup rolled oats
  • 1 cup whole wheat pastry flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/3 cup vegetable oil

Instructions:

  1. Preheat oven to 350° F.
  2. Filling:
  3. Cut off the tiny hard stem from each dried fig before chopping.
  4. Combine chopped figs, water, and sugar in a saucepan.
  5. Bring to a boil. Reduce heat to medium and cook, uncovered, for 5 minutes, stirring occasionally. Spread onto a dinner plate to cool a little.
  6. Crust:
  7. Line an 8 x 8-inch square baking pan with parchment paper.
  8. Combine oats, flour, sugar, and baking soda in a bowl.
  9. Add oil, combining gently using your hand.
  10. Set aside 1/2 cup and spread the rest evenly into pan, pressing down firmly using the back of a spatula.
  11. Cover with warm fig topping. Scatter reserved oat mixture over the top. Press down lightly.
  12. Bake for 30 minutes. Cool completely before cutting.

    These look delicious and knowing your recipes they won’t be achingly sweet yet still satisfying. Hubby’s favorite jam is his Nana’s fig jam which is spiced with cloves so I will make this and add a bit of cloves to it. And then for fun I’ll try it with my home-dehydrated Italian plums (which will also be a powerful fiber boost, haha!). When I get the fig batch made I’ll post a picture for you.     I often substitute applesauce for the oil called for when making a boxed cake to save calories (so I can have more cake!)…do u think this would work in this fig recipe? Thanks!

      Dates are a lot sweeter than figs so you may find it too sweet. Please let us know how they turned out.

      Just read the packages of the ingredients you are using, and add up the nutritional information for the amount of each ingredient. Divide by the number of servings.

      Look at the nutrition information on the packages of each ingredient you are using. Figure out the calories for the amount of each ingredient, add them up, and divide by the number of servings.

    If I wanted to make a gluten free version of this what would be the best flour to use?

      I have been making date squares for years and one thing to make the figs/dates filling even better is by always adding 1/2 tsp of baking soda to each 8 ounces of warm dates/figs filling. Fluffier and tastier. Enjoy. Marie

    Do you think this recipe would work with other dried fruit if I can’t find figs? Like maybe dates or apricots, peaches etc?

      I often cook with dried apricots and can see no reason why they should not work in this recipe. NOTE: Dried apricots are tart. I like tart! But you will have to try it and decide for yourself. Good luck and thanks for the idea. Now I want to do it! 🙂
