My Dinner Salad

I eat a salad every day. It's my health insurance policy. Use as many colors as you can for the most antioxidants and make just enough dressing to lightly coat the vegetables. For two people, I use barely a tablespoon each of oil and vinegar. I vary the vinegars for variety, with pomegranate or cherry vinegar. - Jenny Jones

Makes: make it big or small

My Dinner Salad

Ingredients:

  • Romaine lettuce
  • Green cabbage
  • Bell peppers
  • Tomatoes
  • Garbanzo beans (canned)
  • Red onion

  • Dressing:
  • Equal mix of olive oil & balsamic vinegar (1/2 and 1/2)
  • Pinch of salt & pepper to taste

Instructions:

  1. Place salad ingredients in a large bowl.
  2. Add just enough dressing to coat the veggies and toss well.
  3. Eat a salad every day!

    Hi Jenny! I have two questions regarding this amazing salad:
    1. Is there a reason you don’t use cucumber? It is supposed to be a very healthy ingredient…
    2. Do you cook the garbanzo beans for each serving or do you make a batch and use some for each meal?

      Every vegetable has multiple health benefits and I often augment my salad with things like cucumber, fresh peas, spinach, shredded carrot, or anything that’s in season but I always include the brightly colored veggies, and I use canned beans in my salads.

    Thanks for posting this….I know my husband and I should eat more salad, but for some crazy reason I don’t like to make salad. But this seems so simple and healthy I am going to really put the effort into adding a salad into our daily menu!!!

    Thank you for reminding me how healthy the daily salad is!

    My mom still does, and I should do it also…..
    She would put garlic cloves in the vinegar bottle and store, She would then use the one that she had in the cabinet. Rotate the bottles, and the taste was excellent.

    I’m loving the idea of pomegranate vinegar but I’ve never seen it here in Canada…it would make an amazing vinaigrette! Salad is so good for you! One thing I do to keep salad from being humdrum is adding fresh herbs…mint is especially nice. A finely grated garlic clove is yummy too 🙂

    Thanks Jenny for reminding us how good and easy healthy eating can be.

    When my granddaughters were just able to reach the counter we started making our own salad dressings. Sooo easy and sooo good.

    We make all kinds with the O & V being the most popular. I sometimes add some minced garlic or italian seasoning.

    Have you ever read the ingredients in bottled salad dressing!!!!! Bad Stuff.
