Green Eggs, No Ham

Total Time: 17 minutes

Makes: 2 servings

Green Eggs, No Ham

Ingredients:

  • 4 eggs
  • 2 Tablespoons milk
  • 1/4 teaspoon salt
  • pepper to taste

  • 1/2 teaspoon olive oil
  • 1/4 cup diced onion
  • 1 heaping cup chopped broccoli
  • 1 heaping cup chopped kale
  • 3 cups baby spinach (about 2 oz.)

Instructions:

  1. In a small bowl combine eggs, milk, salt & pepper. Set aside.
  2. In a large pan heat the oil over medium-high heat. Cook and stir the onion, broccoli & kale for three minutes.
  3. Reduce heat to low and add spinach, cooking for one minute.
  4. Push vegetables to one side of the pan. Pour in eggs, stir and cook, gradually stirring in the vegetables until eggs are done.
