Caramelized Apple Pancake

I love these golden caramelized apples in a light puffy pancake. You’ll need a cast iron skillet and if you have oven gloves, use them... the pan gets really hot! - Jenny Jones

Total Time: 30 minutes

Makes: 2 servings

Caramelized Apple Pancake

Ingredients:

  • 3 eggs
  • 1/2 cup milk (low fat or whole milk)
  • 1/2 cup all purpose flour
  • pinch of salt
  • tiny pinch of nutmeg (really, just a tiny pinch)

  • 2 Tablespoons butter
  • 3 Tablespoons brown sugar
  • 2 large apples (1 pound) peeled & cut into 1-inch chunks (I use Granny Smith)

Instructions:

  1. Preheat oven to 400° F.
  2. In a bowl, whisk together the eggs, milk, flour, salt & nutmeg until smooth. Do not use electric mixer. Set aside.
  3. In a 9-inch cast iron skillet over medium-high heat, melt the butter and brown sugar.
  4. Add the apples. Cook & stir for 5 minutes until apples are golden & lightly browned.
  5. Pour batter over apples and place skillet in oven.
  6. Bake about 15 minutes until pancake is set.
  7. Remove from oven and invert pancake onto a serving plate.
  8. Serve immediately. Dust with powdered sugar if you like.

    Love this recipe! My skillet is larger, so I adjust quantities, but it just means more delicious pancake! I have had varying degrees of success getting it out of the pan. Tends to want to stick to some sides occasionally. Will keep working on it. Thank you!

    Absolutely delicious and easy–I followed the recipe exactly (except I didn’t peel the apples). The pancake popped right out of the pan. Next time I may double the batter; I love the eggs taste and texture of it.

    Hi Jenny
    I can’t use a cast iron pan because after a blood test not too long ago it showed I have high iron in my blood. Nobody else in my family had this problem. Do you have any advice? Thank you

      Yes. You can use enameled cast iron where the inside (the part that touches the food) is coated with enamel.

    Am I the only one having problems with this recipe? Even with my seasoned cast iron skillet, it stuck and came out in shreds Puffed up nicely around the edges and was undercooked in middle. Going to try it again, though.

      Assuming you did not change the recipe and are using a 9-inch cast iron skillet, it could be your oven is not hot enough. Some ovens can take 25-30 minutes to reach 400.

    The recipe does not really need any embellishment, but I found something that makes it STUNNING! A local market (Lansing, MI) called Horrocks Farm Market makes their own brand of food products, mostly in glass containers. (Jams, etc.)
    Their Apple Pie Syrup is so good on this breakfast dish. You just have to lick your plate!

    Our apple tree had a lot of fruits this year and was looking for a breakfast recipe and found this. I followed as directed but since I did not have a cast iron I used a regular pan to caramelize the apples then transferred it to a pie pan and it turned out sooo good and crisp. My picky eater husband even enjoyed it. Thanks very much Jenny for sharing the recipe…..

    I used a large rectangle cast iron pan and doubled the recipe and it came out looking like the picture, but it wasn’t as crispy as I would have liked. I did use extra butter for the apples but it still tasted great. We both enjoyed this and looking forward to making it again, thanks Jenny. Keep the recipes coming !

    to reply to the above question… NO, a stainless steel pan will not make these crisp as they should. It will steam and make a soft pancake. If using a stainless steel pan, you’ll be better off making a flaky/layered/softer dutch baby.

    This recipe was delicious and easy, what more can you ask for. Would love to make this for a crowd but first I need another cast iron pan. Do you think a 13 by 9 pan would work if you caramelized the apples pan first in the cast iron pan and pre-heated your casserole dish?

      I’m sorry I can’t say since I have only made it in cast iron. You could do a search for a similar pancake made in a 13 by 9 pan and see what comes up.

    I’ve only recently begun baking with my Lodge cast iron skillet. Every recipe has been so wonderful that I am now hunting all over for more cooking and especially baking recipes. I just finished baking (and devouring) the best coffee cake I’ve ever tasted, and it has further ignited my desire for the next cast iron venture. This recipe looks so scrumptious that if it were not so late at night (morning) I’d already be at the store to buy some apples. Alas, I have to find time to squeeze in that grocery store trip in the next couple days or I will go mad thinking about this recipe.

      Just got home with my apples and discovered something very wonderful after copying this recipe to the My Cookbook app I have for my android phone. I entered this recipe manually, but wanted your picture to view as I make this tomorrow. So, I came here to ask if I could use an image of your apple pancake, using my phone. Just looked at the “Share” options for this recipe so I can send it to a friend later. That is when I discovered that I can actually import this recipe directly to my phone app for using in the kitchen! Wow! I’ve already manually typed in a few of your recipes, so it is with great relief to find that these recipes can be imported by just navigating to the recipe and importing as I do other sites like allrecipes, bettycrocker, etc. Huge timesaver for me as I find it a pain to type on phone keyboards and haven’t saved for a tablet yet.     I am not supposed to use cast iron on my ceramic/glass top stove, so do you think an all stainless steel (including handles) casserole type pan/dish would give the same caramelization as the cast iron pan?

    if you do not have an iron skillet can you substitute with a regular baking dish of glass ?
    Or do you have any suggestions other than getting an iron skillet?

      I’m only guessing because I always use a cast iron pan but I think you could try an oven-safe skillet but make sure the handle is not plastic or wood. You could also try doing a search for a similar pancake without cast iron and see what comes up. I don’t think you can get good caramelization in glass.

    How many individual pancakes does this make?

      I makes one large 9-inch pancake which, cut into two, serves two people if it’s your main breakfast. If you have other things like scrambled eggs or bacon and eggs and this is on the side, you could cut it into four and serve four people.

    Jenny,whay we can not use electric mixer ? I always use it when I make polish pancakes .

      Over-mixing can make pancakes tough. Combining the batter gently will keep them light and fluffy. And an electric mixer could add too much air into the batter so you might wind up with more of a souffle than a pancake.
