Salmon Patties

There’s always canned salmon in my pantry for a quick and healthy meal. Salmon protects your heart and promotes beautiful skin and hair. The bones in canned salmon are soft and mash-able so leave them in to add calcium but I remove most of the skin. Any toxins in fish are stored in the skin. - Jenny Jones

Cook Time: 5 minutes

Total Time: 15 minutes

Makes: 4

Salmon Patties

Ingredients:

  • one 7.5 ounce can red salmon, drained
  • 1/4 cup finely diced onion
  • 1/4 cup finely diced red bell pepper
  • 1 Tablespoon chopped fresh parsley
  • 1 egg
  • 1/2 cup fresh whole wheat bread crumbs (not dried)
  • 1 teaspoon olive oil

Instructions:

  1. Place drained salmon in a bowl and mash with a fork.
  2. Mix with onion, red pepper, parsley, egg, and crumbs.
  3. Shape gently into four patties.
  4. Heat oil in a pan over medium heat and cook patties for about 5 minutes until browned and cooked through, turning once.

Note: Make fresh bread crumbs by processing a slice of whole wheat bread, crust removed, in a food processor.

      Canned salmon is already cooked so you must use cooked salmon for this recipe.

      I keep broken wild rice in my home. It cooks up faster than whole wild rice and I love the texture. It is finer. I wonder if you could use that. I don’t know if you should just throw it into the mixture as is first or cook it first. I think I would try cooking the rice first or cooking it until almost done before adding to the mixture.

    Fantastic! Made these last night because of “stay at home” order and trying to use only/mostly pantry items. I didn’t have red pepper, so used minced celery and added cajun spices (onion and garlic powders, thyme, cayenne and smoked paprika). Didn’t need any toppings, and were crispy on the outside and just moist enough on the inside. I used a tall can of wild salmon so doubled the bread and egg. Made the mix in advance and fried them up at last minute. Served with coleslaw. Will make again, even after the quarantine is lifted! Thanks, Jenny!

    I make these often and follow Jenny’s recipe exactly except that instead of bread crumbs I use 4-5 large wheat crackers which I always keep in the pantry and just crumble into the mix. More flavor. Sometimes I add a can of tuna to the mix to make more and we eat them again the next day for lunch! I also top them with a sauce of plain yogurt, chopped bread butter pickles and horse radish. YUM!

    Cooked some frozen basa fillets with a splash of white wine, lemon juice & old bay seasoning, then mixed it up with bread crumbs, pepper, parsley, garlic, dehydrated onions and some parmesan cheese. Pan fried….It was delicious!!! Great comfort food.

    Omg! Just made these for lunch and they were delicious. I added a little diced celery and some fresh ground lemon pepper seasoning then served on a bed of jalapeño ranch dressing with some crackers. Wish I had taken a photo but they were too good to wait for that… yum!

    These are delicious Jenny! It was my first time ever making salmon patties. I laugh because I once bought an expensive can of salmon, opened it up and it freaked out because it had bones and skin. I tossed it because it looked horrible! I thought it was an mistake. Now, thanks to you I know. For this recipe I actually some frozen salmon filets I had in my freezer. I didn’t want to waste them but I didn’t care for the brand to eat them plain. So I cook them in the pressure cooker and then made the patties. Loved how simple and clean the ingredients are. I served mine with a dill pickle dipping sauce and a side of roasted asparagus. The best! I will definitely make them again. Thank you.

    These are delicious and oh so easy. I also make something similar using canned tuna instead of salmon. The recipe is very forgiving. Like others, I use whatever fresh veggies I have available — minced onion, minced celery, minced carrot, any color bell pepper,

    Sometimes I make a Tziki-type sauce to put on top: No measuring — mix together sour cream OR plain, non-fat yogurt, finely chopped, peeled cucumber, and a large sprinkling of dried dill. Fresh dill is wonderful in this also. Mix together and put a dollop on top of each patty. This sauce is good on any baked or broiled fish.

      You can sub either yogurt or sour cream for the egg

        Another option for an egg replacement is flax seed mixed with water. It becomes a gel texture so it binds nicely. Check Google for measurements. ?

      Mixing 1 teaspoon (7 grams) of baking soda with 1 tablespoon (15 grams) of vinegar can replace one egg in most recipes.

    My mom used to cook this for our family when I was home, I’ve cooked this for my family and now my boys cook for their families. I also have used canned Mackeral. It is a lot cheaper than Salman and doesn’t have such a fish scent. I prefer the RED SALMON which is a treat

    Encouraged by everyone’s comments, I attempted the salmon burgers tonight. However, I couldn’t get them to stay in patty form (second egg needed perhaps?) so I ended up just scrambling them in the pan, the way I do with hamburger meat when I’m too lazy to make actual burgers, & ate the concoction with a spritz of a lemon wedge. It was ok….not the best.

    Just made the patties — sort of. I don’t know what it is about the impulse to change recipes. I thought I was the only one, but am discovering it’s not so.

    I didn’t have the red pepper, so I used celery. Didn’t have whole wheat bread, so used Panko.

    Added a small clove of garlic. Life is not life without garlic!

    They held together just fine.

    Tastes good, though I think I can improve on it.

    I LOVE how easy and quick these are to make. I also love that you can vary them, according to what you have on hand.

    What a great recipe to work with or work off of.

        Gloria, I make mine almost the same as yours, using celery, onion with Pano or store-bought bread crumbs. A little garlic, and salt and pepper. Served with lemon wedges.

      except fruit and sweets! A little goes a long way, sure enhances the flavors… I’ve started using lemon pepper on my meats and vegetables… It has alot of garlic in it, never new that, used to think it only contained lemon and pepper… Learn something new everyday ??‍♀️

    I followed the recipe except I did not have fresh parsley so left it out and I added a Tablespoon of grated and minced carrot because I had it and I sprinkled some Montreal Steak Seasoning on the salmon. I used 2 eggs and a cup of fresh soft bread crumbs because I had a 14.5 oz can of salmon, however I did use 1/4 cup minced onion and 1/4 cup red bell pepper minced and cooked until they were soft.

    I cooked the patties in butter and they were the best we have ever had.

    To have red bell pepper on hand I clean and seed the pepper, make thin “sticks” and mince the pepper. I lay them on foil or wax paper and freeze then put in a zip-loc bag so I always have bell pepper when I need it and it cuts down on waste. I also cook my onion and pepper (and garlic) enough to soften for salmon patties.

      I like to saute the vegs too, to soften and maximize flavor. I forgott myself and used breadcrumbs by mistake- They were good but would have held together better with fresh. My bad.

      I remember my mother making these but I don’t remember the recipe. I do know that the ‘bread crumbs’ were crushed saltine crackers and the white sauce was the Argo Cornstarch White Sauce recipe.I would like to find this recipe also. I am finding that my childhood memory of tastes are different from my adult tastes of the same recipe. 😉

        Old Easy Salmon Croquettes – Plain – Not Fancy

        1 sleeve Saltine crackers crushed
        2 eggs
        1 can salmon – 14.75 ounce
        x small onion diced

        Classic White Sauce

        A classic sauce. Use as is or add cheese, vegetables, dried beef, chicken, etc.
        Quick Facts
        Prep Time: 5 minutes
        Cook Time: 5 minutes
        Yield: 1 cup
        Ingredients

        1 tablespoon Argo® Corn Starch
        1 cup milk
        2 tablespoons butter OR margarine
        1/4 teaspoon salt
        1/8 teaspoon pepper

        Directions

        Stove Top: Combine corn starch and milk in a small saucepan; stir until smooth. Add butter, salt and pepper. Stirring constantly, bring to a boil and boil for 1 minute. Remove from heat.
        Microwave: Combine corn starch and milk in a 2-quart microwave-safe bowl; stir until smooth. Microwave on HIGH (100%) for 2 minutes; remove and stir. Microwave 1 to 2 minutes more, or until mixture thickens and boils for 1 minute. Remove from microwave. Stir in butter, salt and pepper.
        Makes a delicious, creamy sauce for vegetables, casseroles, chicken or seafood.

          I make my Salmon Patties somewhat like yours but never added the red pepper but will make that change. i make the white sauce like yours only i add green peas either frozen and thawed or steamed. Serve it over the patties. It makes a nice flavor and looks pretty.

I made these several months ago, but without the parsley and with green peppers. They were just OK, but following the instructions, season with fresh lemon and Himalayan Salt they are gourmet..

    I watched the video and noticed you used a store brand bread. I have your whole wheat bread recipe can I use this bread. I usually make 2 loafs and freeze it since I live alone and only need 1/4 loaf a week. Also, is there a reason why you don’t dry the bread by toasting before adding it?

      Of course you can use my wheat bread for this. I used store bought because many people don’t make their own bread and they’ll know what to look for. Fresh bread crumbs provide more moisture than dried and are better for this recipe.

        Hello, I love your videos and many of your recipes.
        I tried this with dried ground breadcrumbs (had no fresh bread in the house), otherwise followed it exactly, and I felt they came out almost too moist. I liked the creamy texture inside but still they seemed a bit wet (and I drained the canned salmon well).

        My usual recipe calls for a mixture of 60-40 mix of breadcrumbs and mashed potato flakes…

        Maybe I’ll try in-between next time.

    My gram made these very often.. No meat Fridays. None the less she made a topping of creamed peas and carrots. They were awesome. For better flavor, instead of bread crumbs, try ritz crackers. Butter makes all the difference.

      I add 2 eggs, no onion or garlic, just a little salt and pepper, red pepper flakes, a Tabl of dill pickle juice, some basil and crushed soda crackers. I then fry in real butter until outside is crispy crunchie. To me, these are perfect! I take all grey blood and skins off also. Mix it into dogs food. Not his favorite but will eat it.

    I grew up on the North Carolina coast when shrimp were a glut on the market….. many, many years ago. There were definitely shrimp patties, in season. Chop the shrimp in a processor in one long 5-7 seconds grind at most. You want some chunkiness. This gives you nice chunks and small pieces in the patties. You can use any recipe for patties.

    Just made the salmon patties – sooooo good! will never make them any other way.

    Also, tried your chicken meatballs – got great reviews. One thing I have learned from your videos is that I always overcooked my food – your recipe called for cooking the meatballs for 20 minutes – I always cooked them for one hour! so glad I now have you as a tutor!!

    One question I have – if you use fresh herbs such as parsley, what is the best way to save what is not used for another time?

      I grow parsley and basil. For flat-leaf parsley, trim the bottom stems a little, to make them somewhat the same length; then stand them in a cool glass of water; they are pretty on a windowsill, and just use as needed. Many herbs can be saved this way. Change the water every few days, to keep it fresh. Curly parsley usually does not have long enough stems, but I prefer flat-leaf anyway.

I made a light cream sauce and added a few frozen peas AND I grew up with mother putting a slice of toast (I used your homemade bread, has to be toasted)on each plate; with the salmon patty, and cream sauce/peas on top.       I’m sorry I can’t say – I have never used shrimp.

      To substitute shrimp I recommend a garlic and olive oil flavor perhaps with a touch of basil or my favorite is to barely process the shrimp with dried tomatoes (in oil), horseradish and lemon with egg and bread crumbs. We’ve also just mixed shrimp, capers, salt and pepper, egg and whole wheat cracker crumbs. Delish!

    I love your videos Jenny but for your salmon patties, my opinion would be that i prefer the onion and bell pepper to be cooked before adding them raw in the salmon.
    That way, you’re not biting into something hard or not cooked, you know what i mean ???
    I will try it but with my version, wich is cooked onion and red bell pepper.

    Love your recipes, these salmon cakes are the best I am Guyanese and we make these with dhal and rice or as a sandwich. We like food a bit spicy so we add hot peppers. We also use cooked mashed potatoes in stead of bread crumbs.

    I grew up eating salmon patties (I’m 73) and my mother always used saltines, so I Always did too. I’m going to try the breadcrumbs and the Panko crumbs, maybe in combination, the next time I make them. Guess I will leave out the pepper though as my husband dislikes peppers. May chop up a few pimentos though…..he never sees it as pepper. Lol

    I made the salmon patties today and they were delicious! They turned out pretty like yours with the red and green flecks of color throughout.

    I made a couple small adjustments based on what I had on hand: I crushed some Ritz Crackers in the chopper for filler (as I didn’t have the wheat bread). I had a jar of roasted red peppers, so chopped some of those since I didn’t have the fresh red pepper.

        Jenny, I always used dry bread crumbs but anxious to try soft fresh bread. I suspect the difference is that the fresh bread will hold together better than the bread crumbs, which have a tendency to crumble a little when forming and frying. Or is it the taste?

    I have been making fish cakes for years and I’ve just tried this recipe….. Amazing. I replaced the parsley with a good handful of fresh spinach. I also used a Nutribullet to whizz up/blend the onion, spinach and breadcrumbs. I can definitely recommend grating or blending the onion. What a difference it makes to the taste. Thank you so much. X (ps I omitted the peppers because I really don’t like the taste and threw in a few dried chilli flakes instead.)

      If you mean hamburger buns I think you could. These patties are smaller than hamburger buns so you might want to make the patties flatter and wider. If I were doing it I would only make two salmon patties from this recipe. That way they would be the right size for the buns and would give you two substantial salmon burgers.

          I think crumbs made with Ezekial bread would not be very soft and the salmon patties might be a little more chewy.

      You can’t buy fresh breadcrumbs – they have to be made fresh at home because they are soft and moist. Fresh crumbs are essentially just fresh bread in very small pieces. You can take a slice of bread and either process it in a food processor or you can cut it into tiny pieces with a sharp serrated knife.       Some possible reasons for your patties to fall apart: 1) Salmon not drained well enough. 2) Egg was too small. (I use large eggs) 3) You used dried bread crumbs. They should be “fresh” bread crumbs and that could be my fault for not being clear. I have clarified the recipe to say “fresh, not dried” bread crumbs. Fresh crumbs have more moisture so I hope you’ll try again and let me know how they turn out.

      Lynda, you can get the nutritional information by going to a website that you can log food to get your daily calorie intake. When I make something, I add the full ingredients to the recipe, and then figure out how many servings I have and divide by that.

      You can use SparkPeople, or MyFitnessPal, for examples!

    When you drain the salmon does it have little bones or anything that has to be picked thru.

      The bones in canned salmon are soft and mash-able so leave them in to add calcium.

    I grew up on these in England. My Nanna made them with mashed potatoes and finely chopped onion then rolled them in a light dusting of flour before she fried them. They were wonderful. I make them sometimes.

      This is how Mum always made her Salmon Patties, with (firm) mashed potato, chopped onions-either spring onions or regular ones-and a dusting of flour before frying. We’re in Sydney, Australia, so I guess this is a recipe she inherited from her English forebears via her Aussie Mum or English Dad. I have loved them forever-they really are delicious.

    I am allergic to yeast and corn so we have discovered Rice Krispies as a binder instead of bread or cracker crumbs. They really create an amazing texture for anything you normally use bread crumbs for.

      To use fresh salmon with my recipe, it needs to be cooked first, then cooled and flaked. Try to use about the same amount of salmon as the can which would be 213 grams or just under one cup. Ciao back to you!

    As a child these were a regular staple in our family of six. Mom always served them with tomato soup and we would dunk bites or just put bites in the soup and then eat. Mom also used saltines in her mixture instead of bread crumbs.

    My Grandma was from Louisiana and made the best salmon patties. Although she gave me the list of ingredients (because she never wrote down recipes) mine were never as good as hers. After years of trying to replicate hers I finally asked her exactly how she made them. I was doing everything she did EXCEPT she grated her onion. It made all the difference. Grating the onion helps to keep the patties intact and is easier than getting that fine dice fine enough. Try grating your veggies and see if you like the texture better.       Yes, you can bake these. I would try a 400 degree oven on a greased baking sheet for 10-15 minutes, turning once. I’ve never done it but that’s my best guess on time & temp.

    My Mom used to make these and I haven’t had them now for 30+ years. It is below zero, so I won’t be going out and I don’t have all the ingredients, so I will be substituting celery for the peppers, chives will be substituted for the parsley and regular bread crumbs will be used in place of the wheat crumbs (it is either that or sawdust). I am sure it will be great!!!

      Hmmm, I’m not a freezer expert but that does not sound good to me. It seems you would lose some moisture and texture. However, I might cook them first, then freeze. If you do either one, please let me know – it would be good information to share. Hey… I’m making salmon patties tonight and I’ll freeze two (one uncooked and one cooked) and report on those when I take them out.

          I experimented by freezing both cooked and uncooked salmon patties and I would definitely cook them first and then freeze. If you cook them first and then freeze, all you have to do is thaw and warm them again, which you can do quickly in a pan or a microwave. When you freeze them uncooked, you first have to thaw them, which takes time, but freezing made them kind of soggy and they did not hold their shape very well so they were harder to cook. That’s why I say to cook first, then freeze.

      I make tuna patties all the time. Pretty much the same way except I’m not a huge fan of peppers. I also salt and pepper my mix before making the patties. Growing up in the south (US) we always breaded the patties with corn meal for extra crunch.

        I’m 66 now.
        Always with corn meal a little flour,onion.eggs and canned salmon with juice,salt and pepper.
        Hot oiled pan & don’t turn till browned on bottom,they won’t break apart that easy.
        But I am going to try Jenny’s way too !
        Now I know I can freeze them too !

    i have made these many times over the years, also can bake in a loaf pan in the oven . fast and easy with instant mashed potatoes and peas or corn . can have dinner on table in about 15 to 30 min .i use those panko crumbs italian style .
