Oven-Roasted Sweet Potato Fries

Wait ‘til you see how easy it is to make these healthy, sweet fries. Roasting vegetables brings out their natural sugars so they are even sweeter than the fried ones. If you use a convection oven, the fries will brown faster. - Jenny Jones

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Makes: 2 servings

Oven-Roasted Sweet Potato Fries

Ingredients:

  • 2 large sweet potatoes (or one humungous one)
  • about 2 Tablespoons canola oil

Instructions:

  1. Preheat oven to 425° F.
  2. Peel sweet potatoes & cut off pointy ends. Cut into 1/2 inch thick slices.
  3. Grease a large baking pan with 2 teaspoons canola oil.
  4. Pour one tablespoon oil into a soft plastic bag (a produce bag works well).
  5. Place fries in the bag and rub to coat.
  6. Place fries on baking sheet, separating so they don’t touch.
  7. Roast for 15 minutes, turn fries over and roast another 15 minutes or until golden brown.

    I made several items and in love w/your recipes!!! Sweet Potato Fries were a little too oily because I added more than it called for but still yummy. Love the chocolate cake and the lemon bars are awesome.

      I made these fries again for dinner and didn’t peel them this time. I used two huge sweet potatoes for the two of us, and we barely had any leftovers!

    I was about to make some sweet potato fries only to find out that I will not be making sweet potato fries but “yams.” I always wondered why I did not like orange french fries.

      What we call yams, the ones with the dark flesh, are too soft to make fries. You have to use the light-flesh sweet potato but I think you already figured that out.

    Hi Jenny, I live in the UK and our sweet potatoes have a dark brown skin and orange flesh so I’m not sure they are the same sweet potatoes you have over there ? Love your recipes by the way.
