Healthier Apple Crisp

This takes 4 very large apples and I highly recommend adding the toasted pecans to the topping. - Jenny Jones

Prep Time: 25 minutes

Cook Time: 35 minutes

Total Time: 1 hour

Makes: 4-6 servings

Healthier Apple Crisp

Ingredients:

    Topping:
  • 1/2 cup rolled oats
  • 1/2 cup whole wheat pastry flour (all purpose flour works too)
  • 1/3 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 3 Tablespoons vegetable oil (cold butter works too)
  • 1/2 cup finely chopped toasted pecans (optional)
  • Apple Filling:
  • 3 Tablespoons white sugar
  • 1 Tablespoon all purpose flour
  • 1/4 teaspoon cinnamon
  • 7 cups (2 pounds) Granny Smith apples, peeled, cored & cut into 1/2 to 1-inch chunks

Instructions:

    Topping:
  1. Preheat oven to 375° F.
  2. Combine oats, flour, brown sugar, & cinnamon in a bowl.
  3. Mix in oil using your fingers. Take time until it gets a bit clumpy.
  4. Add pecans, if using, and set aside.
  5. Apple Filling:
  6. Combine sugar, flour, and cinnamon in a plastic bag (I use a soft produce bag).
  7. Add apples and shake the bag until apples are coated.
  8. Place apples into an 8x8-inch square or 9-inch round pan and top with oat mixture..
  9. Bake for 35 minutes. It's best served while still warm.

Note: To replace the oil in the topping with butter, use cold, cubed butter and mix it in with you fingers until crumbly and refrigerate while you prep the apples.

    Hi Jenny,
    Many of your apple recipes call for peeling the apples (apple cake).
    I feel guilty losing all the vitamins and minerals.
    I’ll try leaving the peeling on –
    My daughter never peels her apples when baking.
    Does anyone have any suggestions or thoughts about this?

    I wanted to use up frozen berries in my freezer. I have a mix mash of all kinds and even added a freshly peeled large apple. I remembered a month back I made this and knew the topping was delicious using different frozen berries again. Luckily I have your email imbedded in my brain! I like the fact I’m not using butter, but a very light olive oil. Always turns out perfectly, very tasty. No olive oil taste at all. Used organic brown sugar and smelling it now in the oven!
    Such simple and easy tweaks Jenny, to change something up in a flash.

You’ll never notice the difference and it’s great when crops yield an abundance of zucchini! Thanks for all the yummy food !!! Hmm what should I try next ? ?

    Love this Apple Crisp. Apples are naturally sweet and don’t need a lot of sugar. I cringe when I read recipes that have huge amounts of sugar in them. This recipe had just the right amount of sugar?

    You’ve done it again Jenny!! I love your healthier recipes and a big fan of apple crisp so I had to make this today. I used 6 small/medium Granny Smith apples and it turned out fabulous topped with fat free whipped cream. Keep those recipes coming.

    This apple crisp is delicious. I did have to bake longer than 35 min in order for the apple slices to be soft e ough.

      Shallow pans are generally recommended for crisp recipes so I’m not sure a Dutch oven would be as good. Please report back if you try.

    Just printed this out, thanks for giving the approx lbs for apples, it drives me crazy when a recipe indicates various cups, etc, never gives the total to buy, one or 2 extra apples no big deal we can eat those, , but my husband is guessing an apple per cup sliced, we will soon find out when I weigh them ay the market. I am sure it will depend on size of apples, Granny Smith my favorite apple to bake with, love your recipes, chocolate chip cookies so good, I double recipe, freeze some for when grandsons come for a visit?

      One large granny smith apple usually weighs 1/2 pound so 4 really big ones are enough.

    Love apple crisp. The butter from Ireland KERRYGOLD is supposed to be heart healthy, why not use that? The taste can’t be beaten. Or use half butter and half light olive oil. Thank you for the recipe.
