Greek Salad

There are no specific amounts on the vegetables because you can use more or less of each one and make as much salad as you need. Feta cheese is better if purchased whole and you can just break some off and crumble it with your fingers. For the dressing you can either crush the garlic in a garlic press or just smash a clove to crack it open and release the essence. (this makes enough dressing for several big salads) - Jenny Jones

Makes: 3/4 cup dressing

Greek Salad

Ingredients:

  • Romaine lettuce
  • Persian cucumbers, can be peeled or unpeeled
  • Tomatoes: red, yellow, or heirloom
  • Sliced red onion
  • A few kalamata olives
  • A little feta cheese

  • Dressing:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • juice of one lemon (about 2 Tablespoons)
  • 1 clove garlic, crushed or smashed
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • pepper to taste

Instructions:

  1. Make dressing in advance (30 min. or more) so the flavors can marinate. Combine dressing ingredients in a glass jar. Cover and shake to combine. Refrigerate until needed.
  2. Place lettuce, cucumbers, tomatoes, & onion into a large bowl.
  3. Add just enough dressing to coat the veggies and toss well. (keep remaining dressing refrigerated)
  4. Throw in a few olives and top with crumbled feta cheese.

    Follow many of your Polish recipes ….my immigrant parents from Poland cooked many similar dishes. Found a Polish deli in south Florida with very good homemade kielbasa .

    Hi Jenny,
    I have made lots of your recipes recently including the breakfast cookies, meat sauce, blueberry pancakes and now this. All turned out great! But a question – does this salad dressing need to be refrigerated? I find it clumps and separates in the fridge but stays perfect on the counter. Thank you for your help.

      I keep my salad dressing refrigerated and it separates too but I find if I shake it up and pour right away, it works well but I try to remember to bring it to room temperature before dinner.

    Jenny, I live in a huge Greek community in Florida and they all put a scoop of potato salad at the bottom of the bowl before assembling the rest of the salad. A few more calories but heavenly tasting!

      It’s so funny you said that because I was in a Greek restaurant in Tarpon Springs, Florida and ordered a Greek salad. It came with potato salad at the bottom and it was fantastic!

      I had the same problem using Chrome. Then I tested another recipe to print and it worked, went back to the Greek Salad recipe and it came up to print. Are using Chrome or if not, what browser are you using. I need everything to work for everybody so please let me know. Thanks.

        I found the pages blank too. Then someone told me to press the control (Ctrl) key on lower left of my computer and the P key in quick succession and there the recipes were ready to be printed.
