Quick & Easy Lemon Chicken

Ingredients:
- 3/4 cup chicken stock
- Zest of one medium lemon
- 2 Tablespoons fresh lemon juice
- 4 teaspoons sugar
- 1 clove garlic, crushed
- 1/4 teaspoon powdered ginger
- 1/4 teaspoon salt
- 2 teaspoons vegetable oil (I use avocado oil)
- 6 ounces chicken tenders, cut into 3/4 to 1-inch pieces
- 1 Tablespoon + 1/4 teaspoon corn starch
- 1 Tablespoon water

Instructions:
- Combine sauce ingredients in a measuring cup and set aside.
- In a tiny bowl, combine the corn starch and water and set aside.
- Heat oil in a pan on medium–high heat and add chicken. Cook & stir for 3 minutes.
- Pour in the sauce and bring to a boil.
- Reduce heat to medium and slowly stir in the corn starch slurry. Simmer for 2 minutes or until thickened. Serve over rice.
