Chewy Oatmeal Chocolate Chunk Cookies

I use a 70% dark chocolate bar instead of chocolate chips but dark chocolate chips would work too. Jenny Jones

Cook Time: 12 minutes

Total Time: 27 minutes

Makes: 10 or 11 cookies

Chewy Oatmeal Chocolate Chunk Cookies

Ingredients:

  • 1 1/2 cups rolled oats
  • 3/4 cup (3.2 ounces) all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon (optional)

  • 1/2 cup vegetable oil (I use avocado oil)
  • 2/3 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla

  • 1/3 cup dark chocolate chunks (70% cacao is best)

Instructions:

  1. Preheat oven to 350° F.
  2. Line a baking sheet with parchment paper.
  3. Combine oats, flour, baking soda, salt & cinnamon in a bowl or on wax paper. Set aside.
  4. With electric mixer on medium-high, beat oil, sugar, egg & vanilla in a bowl for about a minute.
  5. On low speed, stir in oat mixture, followed by chocolate chunks.
  6. With wet hands or using a scoop, shape into 2-inch balls and place onto baking sheet. With a wet fork, flatten each one about halfway, until they measure 2 1/2 inches across.
  7. Bake about 12-14 minutes until edges are golden.

    This is a great recipe. I love not using butter in cookies. Next time, I’m going to use only 1/3 c brown sugar and add raisins as this version was quite sweet for me. Thank you so much. I enjoy your recipe videos. Here is a family recipe for egg-free molasses cookies. I think it would work without butter. Grandma Shumway’s Molasses cookies: 1 1/4 c molasses, 3/4 shortening, 1/2 c boiling water, 1/2 c sugar, 2 tsp baking soda, 1 tsp cinnamon, 1 tsp ginger, 3 3/4 c flour. Put sugar, shortening and molasses in large bowl. Add boiling water. Stir until almost melted. Slowly add the rest of the ingredients until well mixed. Drop on greased cookie sheet. Sprinkle with sugar. Bake 8 minutes at 350 degrees. [Like many family recipes this might be from the original Joy of Cooking. I have never looked it up.] I hope y’all enjoy it!

      I’m Wondering IF Applesauce could be an Alternative to NOT using oil or butter.. 🤔. The Oil & butter/margarine are suppose to bring Moisturizer to the product correct? Even going 50/50 with Peanut/Almond butter & Aplsce??

    I am sending a photo. I tried the no butter Oatmeal cookies and they turned out fine. Spread a bit probably because I used raisins and chopped pecans. My Better Half, Bobbie, does not feel Oatmeal cookies should include chocolate! They all disappeared, must have evaporated!

    These cookies are really tasty. I was concerned using avocado oil. Plus, when I had put it all together, it looked like the batter needed more flour. I resisted messing with a Jenny recipe and put them in the oven. They came out perfectly. I couldn’t taste the avocado oil, and they don’t need more flour. It’s amazing such good cookies can be made without butter. Thanks, Jenny!

    Jenny, I just made these (exactly as directed.) I use sunflower oil when baking. Cookies came out perfectly and are absolutely delicious.

    Could I use coconut sugar instead of brown sugar where it’s a less processed sugar
